Abstract

Sektor industri merupakan salah satu sektor ekonomi yang sedang dikembangkan di Indonesia sebagai sektor penggerak kemajuan sektor-sektor lainnya. Peran sektor industri kecil maupun menengah dalam perekonomian dinilai sangat penting terutama dalam pertumbuhan ekonomi dan penyerapan tenaga kerja. Industri kecil menengah dirasakan relatif lebih dapat bertahan dalam menghadapi krisis perekonomian, dari pada usaha berskala besar yang membutuhkan lebih banyak modal. Salah satu kota yang berperan aktif dalam pengembangan Industri Kecil Menengah adalah Kota Batu. Kota Batu terkenal dengan buah apelnya, sehingga sebagian besar industri pengolahan mengolah apel menjadi minuman sari apel. Permasalahan yang timbul di beberapa industri kecil minuman sari apel tersebut yaitu kurangnya kemampuan dalam perencanaan produksi dan peramalan jumlah permintaan. Perencanaan produksi merupakan kegiatan perencanaan yang dilakukan sebelum melakukan kegiatan produksi dengan mempertimbangkan jumlah permintaan berdasarkan sumber daya yang dimiliki oleh perusahaan (Paksi et al, 2013). Tidak adanya peramalan permintaan yang tepat dan jelas berdampak pada jumlah produksi yang terkadang mengalami kelebihan atau kekurangan stok produk yang dapat menyebabkan beberapa kerugian seperti bertambahnya biaya penyimpanan, memungkinkan terjadinya kerusakan produk dan hilangnya keuntungan perusahaan dalam menangkap peluang pasar. Tujuan dari penalitian ini yaitu: (1) Mengetahui sistem perencanaan produksi minuman sari apel yang diterapkan oleh industri kecil Kota Batu, (2) Menganalisis perencanaan produksi melalui peramalan permintaan minuman sari apel di Industri Kecil Kota Batu dalam periode 24 bulan berikutnya. Penentuan lokasi penelitian dilakukan secara purposive yaitu di Kota Batu provinsi Jawa Timur dengan pertimbangan Kota Batu merupakan Kota yang memiliki banyak Industri Kecil Menengah. Sampel dalam penelitian ini ditentukan dengan metode stratified random sampling, yaitu pada 3 Industri Kecil Minuman Sari Apel. Metode yang digunakan dalam penelitian ini adalah Winter’s Method. Hasil dari penelitian ini yaitu: (1) Sistem perencanaan produksi minuman sari apel di Indusri Kecil Kota Batu menggunakan prediksi dari jumlah permintaan periode sebelumnya yaitu berupa data bulanan pada tahun-tahun sebelumnya. Dalam hal menetapkan kuantitas minuman sari apel yang harus diproduksi, industri kecil minuman sari apel di Kota Batu belum memiliki angka yang pasti. Industri kecil minuman sari apel di Kota Batu melakukan perencanaan produksi berdasarkan musim-musim tertentu yaitu seperti hari libur sekolah, hari libur nasional, hari libur lebaran, hari libur natal dan tahun baru, (2) Hasil analisis peramalan permintaan menggunakan Winter’s method, untuk 24 bulan ke depan permintaan Minuman Sari Apel Industri Kecil Kota Batu mengalami fluktuatif dan memiliki pola data musiman berdasarkan musim liburan seperti hari libur sekolah, hari libur nasional, hari libur lebaran, hari libur natal dan tahun baru. Selain itu hasil peramalan permintaan Minuman Sari Apel Industri Kecil Kota Batu mengalami trend positif ii yang berarti mengalami kenaikan setiap tahunnya. Pada tahun 2017 rata-rata hasil peramalan permintaan di industri kecil minuman sari apel Kota Batu sebanyak 40.558 kardus, kemudian pada tahun 2018 rata-rata permintaan mengalami kenaikan hasil peramalan permintaan minuman sari apel di Kota Batu dibandingan dengan tahun 2017 yaitu sebanyak 43.923 kardus. Berdasarkan hasil rata-rata peramalan permintaan minuman sari apel di Kota Batu mengalami kenaikan permintaan sebesar 7,66 % dari tahun 2017 hingga tahun 2018. Peningkatan jumlah permintaan setiap tahunnya dipengaruhi oleh semakin bertambahnya tempat pariwisata di Kota Batu yang berkolerasi dengan jumlah pengunjung yang mengakibatkan akan semakin meningkat pula permintaan minuman sari apel.

English Abstract

Industry sector is one of economic sectors which is being developed in Indonesia as progress driving sector of others. The role of the small and medium industrial sector in the economy is considered very important, especially in the economic growth and employment. Small and medium industry is perceived relatively to be able to survive in the face of economic crisis, from the business of large-scale that require more capital. One of the city which has an active role in the development of the small medium industry is Batu. Batu is famous for its Apel, so that most of the manufacturing process apples to be Apple cider drink. Problems arose in some small industry of Apple cider drink such as the lack of ability in the production planning and predicting the number of requests. Production planning is planning activities performed before production activities take into account the number of requests based on the resources owned by the company (Paksi et al, 2013). The absence of right and clear request prediction impacts on the number of production which sometimes has excess or a shortage of stock products that can cause some loss such as increasing storage costs, allowing damage product and loss of profits opportunities for the company. The purpose of this research are: (1) knowing production planning system of Apple cider drink applied by small industry in Batu, (2) analyzing production planning by forecasting demand of Apple cider drink in the small industry of Batu City over the next 24 months. Determining the location of research is choosen purposively, that is in Batu City of East Java with consideration of the city has many small and medium industries. The sample in this research is determined by stratified random sampling method, which is on 3 Small Industry of Apple Cider Drink. The method that used in this research is Winter's Method. Production planning system of Apple cider drink in small industry of Batu uses the prediction of the previous period request number that is form of monthly data in previous years. In terms of setting the quantity of Apple cider drink that must be produced, small industry of Apple cider drink in Batu does not have a definite number. Small industry of Apple cider drink in Batu conducts production planning based on certain seasons, that is such as school holidays, national holidays, Eid holidays, Christmas holidays and new year holidays. The results of this research are: (1) Based on the analysis of request prediction using winter's method, for 24 months ahead, the demand of small Apple cider drink industry in Batu experience fluctuation and has a seasonal data pattern based on the holiday season such as school holidays, national holidays, Eid holidays, Christmas holidays and new year holidays. (2) Results of request prediction of small Apple cider drink industry in Batu experience positive trend which means to increase each year. In 2017 the average demand forecasting results in the small apple cider industry Batu City as much as 40,558 cardboard, then in 2018 the average demand increased the results of forecasting demand for apple cider in Batu City compared iv to 2017 of 43,923 cardboard. Based on the results of the average forecasting demand for apple cider in Batu City increased demand by 7.66% from 2017 to 2018. Increasing the number of requests each year is influenced by the increasing tourist spots in Batu City which is correlated with the number of visitors who will result increasing demand for apple cider.
