Abstract
Kota Batu merupakan salah satu kota yang memiliki hasil pertanian yang melimpah berupa buah – buahan. Banyaknya produksi buah – buahan di Kota Batu mendorong suatu industri untuk menaikkan nilai jual buah dengan mengolahnya menjadi produk olahan buah. Salah satu perusahaan yang mengolah buah – buahan menjadi produk olahan adalah CV. Bagus Agriseta Mandiri yang berlokasi di Kecamatan Bumiaji, Kota Batu. Produk unggulan dari CV. Bagus Agriseta Mandiri adalah produk keripik buah karena peminatnya yang cukup banyak untuk dijadikan oleh – oleh. Saat ini, perusahaan mengalami masalah yaitu ketidaksesuaian antara bahan baku yang digunakan dengan jumlah produk yang dihasilkan. Selain itu, CV. Bagus Agriseta Mandiri juga dihadapkan pada masalah persaingan yang sangat ketat dari perusahaan sejenis. Peningkatan efisiensi proses produksi merupakan strategi yang bisa dilakukan oleh pihak perusahaan untuk memenangkan persaingan dan menghasilkan jumlah produk yang sesuai. Tujuan dari penelitian ini adalah menentukan tingkat efisiensi pada masing-masing proses produksi keripik buah serta menentukan strategi perbaikan yang tepat untuk meningkatkan proses produksi yang kurang efisien berdasarkan variabel input yang berpengaruh. Penelitian ini dilakukan menggunakan metode Data Envelopment Analysis (DEA) model constant return to scale (CRS) dengan orientasi input dan outputuntuk mengukur efisiensi proses produksi keripik buah. Metode DEA digunakan karena DEA dapat bekerja dengan mengukur efisiensi unit organisasi yang dinamakan Decision Making Unit (DMU), mengidentifikasi input yang dibutuhkan, serta output yang dihasilkan unit tersebut. DMU pada penelitian ini ada lima yaitu keripik apel, keripik nangka, keripik salak, keripik labu, dan keripik nanas. Variabel input yang digunakan yaitu volume bahan baku,losses, dan jumlah jam kerja. Variabel output yang digunakan yaitu volume hasil produksi dan penjualan. Berdasarkan penelitian yang dilakukan, proses produksi pada CV. Bagus Agriseta Mandiri secara keseluruhan masih belum efisien. Hal ini ditunjukkan dengan nilai efisiensi dari lima DMU terdapat tiga DMU yang efisien dan dua DMU yang tidak efisien. DMU yang efisien yaitu keripik apel, keripik labu, dan keripik nanas dengan nilai efisiensi 100% dalam kondisi green. DMU yang tidak efisien yaitu keripik nangka dengan nilai efisiensi 99,1% dalam kondisi amber dan keripik salak dengan nilai efisiensi 95% dalam kondisi amber. Efisiensi proses produksi keripik buah di CV. Bagus Agriseta Mandiri dipengaruhi oleh semua variabel input. Urutan prioritas variabel input yang perlu diperbaiki yaitu bahan baku, jam kerja, dan losses. Rekomendasi perbaikan yang dapat dilakukan pada proses produksi yang tidak efisien agar menjadi efisien yaitu dengan merencanakan penggunaan bahan baku, mengurangi pemborosan jam kerja, mengurangi losses, dan meningkatkan penjualan.
English Abstract
Batu city is city which has many agricultural products especially fruit products.The amount of fruit production in Batu encourages industries to raise the value of fruit by some process.The company that processed fruits into products is CV.Bagus Agriseta Mandiri that located in Bumiaji, Batu.Main product from CV.Bagus Agriseta Mandiri is fruit chips as its demand in food souvenir valued as high. Currently, the company is faced problem which is the mismatch between the number of materials using and the number of end products. In addition, CV.Bagus Agriseta Mandiri is also dealed with the strong competitor from similar industries. Increasing the efficiency of the production process is a strategy that can be done by the company to win the competition and produce the appropriate number of products.The purpose of this study is to determine efficiency on each process of making fruit chips and determine appropriate remedial strategies as production improvement which is counted as inefficient, based on input. The research was conducted by using Data Envelopment Analysis (DEA) model of constant returns to scale (CRS) with the orientation of the input and output to measure the efficiency of production fruit chips. DEA method was selected because DEA works by measuring the efficiency of the organizational unit called Decision Making Unit (DMU), identify the inputs needed, as well as the unit of output produced.There are five DMU used in this study such as apple chips, jackfruit chips, salak chips, pumpkin chips, and pineapple chips. Input variables used are raw material volume, losses, and labor hours .Output variable used are the volume of production and sales. Based on research, the production process at CV.Bagus Agriseta Mandiri over all is inefficient.This is demonstrated from the efficiency rating of the five DMUs, there are three efficient DMUs and two inefficient DMUs .An efficient DMUs are apple chips, pumpkin chips and pineapple chips with value of 100% efficiency in green condition. Inefficient DMUs are jackfruit chips with value of 99.1% efficiency in amber condition and salak chips with value of 95% efficiency in amber condition. Efficiency production of fruit chips in CV. Bagus Agriseta Mandiri influenced by all the input variables.The priority order of input variables that need to be fixed are raw material, labor hours, and losses. Recommendations for improvements that can be made on inefficient production to make it efficient is plan the use of raw materials, reduce waste of labor hours, reduce losses, and increase sales.
