Abstract
Minyak atsiri jeruk purut telah dilaporkan mempunyai aktivitas antioksidan yang tinggi. Namun, minyak jeruk purut mempunyai kelemahan yaitu mudah menguap dan teroksidasi. Untuk mengatasi kelemahan tersebut, pada penelitian ini dilakukan mikroenkapsulasi terhadap minyak jeruk purut kulit buah (MJP-KB) dan minyak jeruk purut fraksi ranting (MJP-FR) dengan metode cross-linking menggunakan bahan penyalut dari kitosan dan glutaraldehid. Karakterisasi mikrokapsul dilakukan menggunakan Scanning Electron Microscope (SEM), Spektrofotometer FTIR dan Particle Size Analyzer (PSA). Penentuan efisiensi mikroenkapsulasi dilakukan menggunakan spektrofotometer UV-Vis. Uji aktivitas antioksidan mikrokapsul minyak jeruk purut dan fraksinya menggunakan metode DPPH. Hasil penelitian menunjukkan partikel mikrokapsul mempunyai permukaan kasar dan menggumpal. Serapan gugus imina (C=N) yang menunjukkan adanya cross-linking kitosan-glutaraldehid pada mikrokapsul muncul di daerah 1565 cm-1 (MJP-KB) dan 1598 cm-1 (MJP-FR). Partikel mikrokapsul MJP-KB dan MJP-FR mempunyai rentang ukuran diameter 148,71-420,81 μm. Efisiensi mikroenkapsulasi MJP-KB sebesar 2-3,67% dan MJP-FR 3,27-14,29%. Mikrokapsul MJP-KB dan MJP-FR mempunyai aktivitas antioksidan yang sangat kuat dengan nilai IC50 sebesar 2,47 dan 0,56 ppm.
English Abstract
Kaffir lime essential oil has been reported to has high antioxidant activity. However, kaffir lime oil has weaknesses that are volatile and easily oxidized. In this work, microencapsulation of kaffir lime oil of its peel (MJP-KB) and its twigs fraction (MJP-FR) were used by cross-linking method using chitosan and glutaraldehyde as coating materials to overcome those weakness. Characterization of kaffir lime oil and its fraction microcapsules was performed by using Scanning Electron Microscope (SEM), Spectrophotometer FTIR and Particle Size Analyzer (PSA). Determination of microencapsulation efficiency was performed by using spectrophotometer UV-Vis. The antioxidant activity test of kaffir lime oil and its fraction microcapsules was done by DPPH method. The results showed that the microcapsule particles has rough surface and clumped. The absorption of imine groups (C=N) that indicating the presence of chitosan-glutaraldehyde in microcapsule cross-linking appeared at 1565 cm-1(MJP-KB microcapsule) and 1598 cm-1 (MJP-FR microcapsule). The kaffir lime oil and its fraction microcapsules have a size range of diameter particles 148,71-420,81 μm. Microencapsulation efficiency between 2-3,67% (MJP-KB microcapsules) and 3,27-14,29% (MJP-FR microcapsules). MJP-KB and MJP-FR microcapsules have very strong antioxidant activity with IC50 values of 2.47 and 0.56 ppm.
