Abstract
Produksi apel di Kota Batu merupakan terbesar di Jawa Timur sehingga apel dijadikan Icon Kota Batu. Pada tahun 2014 populasi tanaman apel di Kota Batu sebanyak 2,1 juta pohon mampu menghasilkan buah apel sebanyak 708,43 ton. Buah apel kini telah diolah menjadi berbagai produk seperti keripik apel, sari apel, pai apel, kurma apel, cuka apel, tonik apel, wingko apel, madu mongso apel, dan bakpia apel. Salah satu yang memproduksi bakpia apel adalah UKM Permata Agro Mandiri. Sebagaimana usaha lainnya, UKM Permata Agro Mandiri memiliki beberapa permasalahan salah satunya yaitu bahan baku apel yang saat ini mulai menurun produktivitasnya dikarenakan kondisi tanah di kota Batu yang memburuk. Dampaknya yaitu tidak konsistennya kualitas produk bakpia apel yang dihasilkan. Salah satu upaya yang dapat dilakukan yaitu perbaikan kualitas proses produksi bakpia apel berdasarkan SNI. Metode yang digunakan yaitu uji penerimaan konsumen melaui uji kesukaan dengan skala hedonik, uji laboratorium dan penentuan strategi dengan pendekatan AHP (analytical hierarchy process). Responden pakar yang digunakan dalam penelitian ini antara lain 1 orang dari Diskoperindag, 1 orang akademisi, dan 2 praktisi dari UKM Permata Agro Mandiri. Hasil uji laboratorium terhadap 3 parameter (kadar air, TPC bakteri dan pemanis buatan) pada bakpia apel UKM Permata Agro Mandiri jika dibandingkan dengan SNI bakpia (SNI 01-4291-1996) didapatkan hasil yang sudah sesuai, sehingga perbaikan kualitas dilakukan pada organoleptik yang kurang disukai konsumen yaitu rasa dan aroma. Perlakuan dengan hasil terbaik yaitu pada perlakuan pengurangan gula (300gr), parameter warna sebesar 5,73; rasa sebesar 5,13; dan aroma sebesar 5,13. Hasil analisis strategi perbaikan kualitas proses produksi bakpia apel yang mendapati peringkat pertama yaitu pada strategi menjalin kemiitraan, peringkat kedua yaitu pada strategi penerapan SSOP dan peringkat terakhir yaitu pada strategi pelatihan tenaga kerja.
English Abstract
Production of apples in Batu City is the largest in East Java so that the apple made Icon in Batu City. In 2014 apple plant population in Batu City as many as 2.1 million trees are able to produce apples as much as 708.43 tons. Apple has now been processed into various products such as apple chips, apple cider, apple pie, apple datepalm, apple vinegar, apple tonic, apple wingko, apple honey mongso, and apple bakpia. One that produces apple bakpia is the Permata Agro Mandiri SME. As with other businesses, SME Permata Agro Mandiri has several problems one of which is apple raw material that is currently starting to decline in productivity due to soil conditions in Batu City deteriorated. The impact is inconsistent product quality of apple bakpia produced. One effort that can be done is improving the quality of apple bakpia production process based on SNI. The method used is consumer acceptance test through favorite test with hedonic scale, laboratory test and strategy determination with AHP approach (analytical hierarchy process). Expert respondents used in this study included 1 person from Diskoperindag, 1 academician, and 2 practitioners from Permata Agro Mandiri SME. The result of laboratory test on 3 parameters (water content, bacterial TPC and artificial sweeteners) in apple bakpia of Permata Agro Mandiri SME when compared with SNI bakpia (SNI 01-4291-1996) obtained the appropriate result, so that quality improvement is done on less organoleptic Favored by consumers are taste and smell. The best treatment was the treatment of sugar reduction (60%), the color parameters were 5.73; taste of 5.13; and the smell of 5.13. Result of analysis of strategy of quality improvement of bakpia apple production process that got first rank that is on strategy to establish partnership, second rank that is on strategy of applying of SSOP and last rank that is on labor training strategy.
