Abstract
Madu memiliki banyak manfaat karena kandungan alaminya, sehingga menjaga kualitas madu sangat penting. Faktor fisiko-kimia terutama kadar air dan water activity (aw), perlu diperhatikan untuk memastikan kualitas madu. Pengujian kadar air dan water activity secara laboratorium bisa memakan waktu dan biaya yang banyak, sehingga dikembangkan metode yang cepat, murah, dan efisien menggunakan spektroskopi NIR portabel dan analisis kemometrika. Penelitian ini bertujuan untuk membangun dan menentukan model prediksi kadar air dan water activity pada madu bubuk dan cair (madu hutan dan akasia) menggunakan spektroskopi NIR portabel dengan analisis kemometrika. Penelitian ini juga mengembangkan metode analisis non-destruktif untuk mengukur kadar air dan water activity pada madu. Proses penelitian melibatkan persiapan sampel madu, pengukuran spektra dengan instrumen NIR The SpectraPod (rentang 850-1.700 nm), serta pengukuran kadar air dan water activity di laboratorium. Data yang terkumpul dianalisis dengan PLS-R (Partial Least Squares Regression) untuk mengembangkan model prediksi akurat. Analisis dilakukan pada data mentah dan data yang telah diproses menggunakan moving average serta MSC (Multiplicative Scatter Correction). Hasilnya, model prediksi terbaik untuk madu cair diperoleh dengan metode PLS-R Moving Average (MA) + MSC 16 Channel, yang menunjukkan R² Training 0,9903 dan R² Testing 0,8474 untuk kadar air, serta R² Training 0,9928 dan R² Testing 0,9345 untuk water activity. Sedangkan untuk madu bubuk, model prediksi terbaik juga diperoleh dengan metode yang sama, dengan R² Training 0,8722 dan R² Testing 0,8160 untuk kadar air, serta R² Training 0,9183 dan R² Testing 0,6859 untuk water activity. Hasil ini menunjukkan bahwa metode spektroskopi NIR portabel dengan analisis kemometrika dapat menjadi alat yang efektif dalam prediksi kadar air dan water activity pada madu.
English Abstract
Honey has numerous benefits due to its natural composition, making it essential to maintain its quality. Key physicochemical factors, especially moisture content and water activity (aw), must be carefully monitored to ensure honey's quality. Laboratory Testing for these factors can be time-consuming and costly, leading to the development of a faster, more affordable, and efficient method using portable NIR spectroscopy and chemometric analysis. This study aims to develop and establish predictive models for moisture content and water activity in powdered and liquid honey (forest honey and acacia honey) using portable NIR spectroscopy combined with chemometric analysis. The research also seeks to advance nondestructive analytical methods for measuring moisture content and water activity in both liquid and powdered honey. The research process involves preparing honey samples, measuring spectra with the NIR instrument The SpectraPod (wavelength range 850-1,700 nm), and laboratory Testing for moisture content and water activity. The collected data will be analyzed using PLS-R (Partial Least Squares Regression) to develop accurate predictive models. Analysis will be conducted on raw data and preprocessed data using a moving averageand MSC (Multiplicative Scatter Correction). The results show that the best predictive model for liquid honey was obtained using the PLS-R Moving Average (MA) + MSC 16 Channel method, with R² Training at 0.9903 and R² Testing at 0.8474 for moisture content, and R² Training at 0.9928 and R² Testing at 0.9345 for water activity. For powdered honey, the best predictive model was also obtained with the same method, with R² Training at 0.8722 and R² Testing at 0.8160 for moisture content, and R² Training at 0.9183 and R² Testing at 0.6859 for water activity.
