Abstract
Sifat-sifat reologi suspensi hablur sacharosa - larutan sacharosa tidak murni memegang peranan penting dalain teknologi gula. Pengolahan-pengolahan di dalain sebuah pabrik gula, seperti adanya aliran bahan, penghabluran melalui penguapan, penghabluran melalui pendinginan, pemutaran suspensi dan pemerahan tetes, tergantung pada sifat-sifat reologi suspensi tersebut. Sifat-sifat reologi suspensi itu - sendiri tergantung pada faktor-faktor: suhu, sifat reologi zat cair, kadar hablur, ukuran dan bentuk hablur. Pada saat ini masih sedikit informasi tentang metoda yang dapat dipergunakan untuk menentukan secara pasti pengaruh sifat-sifat reologi zat cair, pengaruh kadar hablur dan pengaruh ukuran serta bentuk hablur terhaaap sifat-sifat reologi suspensi. Para peneliti pada umumnya mempersempit daerah penelitiannya, yang disesuaikan dengan kebutuhannya pada waktu itu.
English Abstract
The rheological behaviour of a suspension of sucrose crystal - impure sucrose solution is of rather high importance in sugar technology. The following operations in a sugar factory depend to some extent on the rheological behaviour of the suspensions: flow of material, evapo-crystallization, cooling-crystallization up to molasses exhaustion, and centrifugalling. The rheologic characteristics of suspensions depend on the following physical quantities: temperature, rheologic behaviour of the liquid phase, content,size and shape of the solid phase. Till now there does not exist any method which could give definitive results over a wide range of the above mentioned quantities influencing the rheologic behaviour. Researchers tried to reduce the investigations on small numerical ranges of those quantities or only on a single point of interest. On the other hand many papers have been published, based on the measurements of the viscosity values of suspensions using coaxial viscosimeters. Many research workers have stated that the measurement of rheologic characteristics of suspensions is much more difficult than the measurement of the viscosity of pure and impure
