Abstract
Buah belimbing wuluh (Averrhoa bilimbi L.) merupakan salah satu tanaman tropis yang dapat berbuah sepanjang tahun. Penyimpanan belimbing wuluh dapat dilakukan dengan metode pengeringan. Oleh karena itu, diperlukan satu solusi agar pengeringan dapat terus berlanjut seperti menggunakan oven pengering (oven memmert). Penelitian ini bertujuan untuk melakukan studi mengenai karakteristik pengeringan belimbing wuluh menggunakan alat oven pengering guna memperoleh data pengeringan seperti kadar air, laju pengeringan, dan moisture ratio (MR) pada rentang suhu 50, 60, dan 70°C dalam keadaan segar, pra-perlakuan hot water blanching dan pra-perlakuan steam blanching. Pengeringan berhenti ketika mencapai penurunan kadar air konstan. Karakteristik pengeringan suatu bahan dapat diamati dengan menentukan model pengeringan yang paling sesuai, dimana dalam hal ini nilai MR dapat diprediksi dengan menggunakan model matematis. Hasil penelitian diperoleh kadar air dalam rentang nilai 9.213%bb – 24.918%bb. Nilai laju pengeringan tertinggi sebesar 0.286%bb/menit hingga 0.775%bb/menit. Nilai analisis warna L*, a, b menggunakan colorimeter menghasilkan nilai secara berturut-turut 31.88 – 41.44; 6.87 – 15.20; 34.72 – 69.33. Model terbaik untuk menggambarkan karakteristik pengeringan belimbing wuluh adalah Model Modified Page dengan nilai R² (Koefisien determinasi) antara 0.9878 – 0.9992, nilai x² (Chi square) antara 0.0002 - 0.0021, dan nilai RMSE (Root Mean Square Error) antara 0.0126 - 0.0450
English Abstract
Bilimbi (Averrhoa bilimbi L.) is a tropical plant that can grows very well during every season. Storing Bilimbi can be done with drying process. Therefore, the drying process is carried out using an oven (oven memmert). The purpose of this research was to analyze the characteristics drying of Bilimbi using hot air dryer with forced convection to obtain drying data such as water content, drying rate, and moisture ratio (MR) at a temperature range of 50°C, 60°C, and 70°C in fresh conditions, hot water blanching pre-treatment and steam blanching pre-treatment. The drying process stopped when it reached a constant decrease in water content. The drying characteristics of a material can be observed by determining the most appropriate drying model, where in this case the MR value can be predicted using a mathematical model. The result of the research obtained the water content in the value range of 9.213%bb – 24.918%wb. The highest drying rate is 0.286%wb/minute to 0.775%bb/minute. The result values in continued of L*, a, b color analysis using a colorimeter is 31.88 – 41.44; 6.87 – 15.20; 34.72 – 69.33. The best fitting drying model to describe the drying characteristics of Bilimbi is the Modified Page Model with R² (coefficient of determination) between 0.9878 – 0.9992, x² values (Chi square) between 0.0002 - 0.0021, and RMSE (Root Mean Square Error) between 0.0126 - 0.0450
