Abstract
Produk dodol salak dari UMKM NF sebelumnya telah memiliki SPP-IRT atau Sertifikat Produksi Pangan Industri Rumah Tangga. Namun dengan berkembangnya usaha, produksi dodol salak tidak lagi dilakukan di tempat tinggal dan telah memiliki tempat produksi tersendiri yang melatarbelakangi UMKM NF untuk memperoleh izin edar berupa MD. Untuk memperoleh izin edar tersebut, diperlukan Sertifikat Izin Penerapan CPPOB sebagai salah satu pemenuhan keamanan pangan. Tujuan penelitian yang dilakukan yaitu berkaitan dengan implementasi dan memberikan rekomendasi perbaikan ketidaksesuian aspek CPPOB di UMKM NF, beserta pengajuannya hingga memperoleh sertifikat IPCPPOB. Metode yang digunakan dalam penelitian ini yaitu metode deskriptif kualitatif yang dilakukan dengan observasi, wawancara, dan dokumentasi untuk memperoleh data yang diperlukan. Penelitian dilaksanakan dengan beberapa tahapan yaitu penilaian mandiri, perumusan rekomendasi perbaikan, implementasi perbaikan, penyusunan dokumen, pengajuan sertifikasi CPPOB, Sertifikat IPCPPOB terbit dan penilaian oleh petugas BPOM. Hasil penelitian menunjukan evaluasi penerapan CPPOB meningkat dari penilaian mandiri dengan jumlah bobot 75 dan rating C (kurang) menjadi A (sangat baik) pada penilaian oleh petugas BPOM. Hasil pengujian cemaran logam berat produk dodol salak UMKM NF yaitu Pb < LOD 0,1229 mg/kg, Cd < LOD 0,1548 mg/kg, As < LOD 0,1000 mg/kg, dan Sn < LOD 4,7468 mg/kg dan pengujian cemaran mikroba yaitu S. aureus < 1 x 101 koloni/g, Salmonella sp. Negatif/25g telah memenuhi persyaratan cemaran pada dodol buah. Pada akhir penelitian, sarana produksi telah mendapatkan rating A (sangat baik) berdasarkan penilaian saat audit oleh petugas BPOM. Secara umum dapat disimpulkan implementasi CPPOB setelah perbaikan pada sarana produksi ini telah sesuai serta sertifikat CPPOB dan nomor izin edar produk dodol salak telah terbit.
English Abstract
The snake fruit dodol product from NF MSME previously had an SPP-IRT or Home Industry Food Production Certificate. However, with the development of the business, the production of snake fruit dodol is no longer carried out at home and has its own production site which is the background for NF MSMEs to obtain a distribution permit in the form of an MD. To obtain that, a GMP Implementation Permit Certificate is required as one of the fulfillment of food safety. The aim of the research carried out is related to implementation and providing recommendations for improving non-conformity aspects of GMP in NF MSMEs, along with applications to obtain a GMP Implementation Permit Certificate. The method used in this research is a qualitative descriptive method carried out by observation, interviews and documentation to obtain the required data. The research was carried out in several stages, namely independent assessment, formulation of recommendations for improvements, implementation of improvements, preparation of documents, submission of GMP certification, issuance the GMP Implementation Permit Certificate and assessment by officers. The results of the research show that the evaluation of the implementation of GMP increased from an independent assessment with a total score of 75 and a rating of C (poor) to A (very good) in the assessment by BPOM officers during the 2nd facilitation. The results of testing for heavy metal contamination of snake fruit dodol products from NF MSMEs were Pb < LOD 0.1229 mg/kg, Cd < LOD 0.1548 mg/kg, As < LOD 0.1000 mg/kg, and Sn < LOD 4.7468 mg/kg and testing for microbial contamination, namely S. aureus < 1 x 101 colonies/g, Salmonella sp. Negative/25g meets the requirements for contamination of fruit dodol. At the end of the research, the production facilities had received an A rating (very good) based on an assessment during an audit by BPOM officers. In general, it can be concluded that the implementation of GMP after improvements to production facillities has been appropriate and the GMP certificate and distribution permit number for snake fruit dodol products have been issued
