Abstract
Konsumsi pangan global cenderung meningkat lebih cepat dibandingkan pasokannya. Bersama Dengan bertambahnya jumlah penduduk, kebutuhan pangan meningkat, sehingga produksi pangan harus mengejar ketertinggalan. Tantangan tersebut muncul seiring dengan keseimbangan antara kebutuhan protein dan lingkungan dan keberlanjutan masyarakat. Oleh karena itu, muncullah ide protein alternatif sebagai berupaya untuk mengganti daging konvensional dengan sumber protein lain yang membutuhkan sarana produksi yang kurang intensif. Penerapan sumber protein alternatif sebagai gantinya konsumsi daging dapat menghasilkan keuntungan yang signifikan baik bagi iklim maupun lingkungan lingkungan alami. Berdasarkan masalah ini, para peneliti dan ahli telah mencari alternatif protein dibandingkan protein hewani. Oleh karena itu, tujuan penelitian bertujuan untuk memberikan ilustrasi melalui pemetaan persepsi beberapa mahasiswa yang dikumpulkan dari disiplin ilmu yang berbeda untuk mengidentifikasi perbedaan dan hubungan antara program studi dan persepsi mereka mengenai beberapa sumber protein. Responden bahwa untuk penelitian ini dipilih secara purposif yang selaras dengan masalah penelitian mengenai apakah disiplin akademik mempengaruhi persepsi sumber protein. Disiplin akademik dibagi menjadi empat kategori yaitu Agri-kompleks, Murni Sains, Ilmu Kesehatan, dan Sosial Humaniora. dan Universitas Brawijaya itu berlokasi di Malang, Jawa Timur sebagai lokasi setting. Akhirnya 137 sampel Mahasiswa Universitas Brawijaya menanggapi kuesioner online. Responden yang mengisi angket berasal dari berbagai disiplin ilmu yang memenuhi kebutuhan diferensiasi yang diperlukan untuk memulai penelitian ini. Protein sumber yang dipilih untuk objek tersebut didasarkan pada beberapa pertimbangan dan observasi persepsi siswa didukung dengan studi literatur. Berbasis hewan Protein diwakili oleh daging ayam, sapi, dan ikan, kemudian protein nabati diwakili oleh tahu dan tempe. Temuan dalam penelitian ini menunjukkan pemetaan persepsi yang dipilih sumber protein di antara berbagai disiplin ilmu memiliki perbedaan yang kecil antara satu sama lain. Secara keseluruhan empat disiplin ilmu sepakat bahwa tahu dan tempe menjadi pasangan protein yang paling mirip diantara 9 pasangan protein lainnya. Kemudian, daging ayam hingga tempe atau sebaliknya menjadi protein yang relatif paling mudah dibuat mengubah preferensi protein mereka. Berdasarkan hasil tersebut, terdapat beberapa implikasi yang perlu didiskusikan. Kolaborasi diperlukan untuk meningkatkan konsumsi pangan kesadaran keberlanjutan di kalangan mahasiswa. Termasuk program perubahan pola makan, meningkatkan penerimaan konsumen melalui pengetahuan dan pendidikan, dan undang-undang pangan dan peraturan mengenai protein alternatif yang sudah mapan. Secara keseluruhan, ini pergeseran pola makan mendukung kelestarian lingkungan, kesehatan, dan stabilitas ekonomi.
English Abstract
Global food consumption tends to increase faster than supply. Along with the population growth, demand for food rises, so food production must catch up. The challenges come along with balancing the need for protein with environmental and societal sustainability. Therefore, the idea of alternative protein emerges as an endeavor to substitute conventional meats with other protein sources that require less intensive production means. The adoption of alternative protein sources instead of meat consumption can yield significant advantages for both the climate and the natural environment. Based on this issue, researchers and experts have been exploring alternatives protein rather than animal protein. Therefore, the research objectives aim to provide illustration through perceptual mapping of several college students gather from different academic disciplines to identify the difference and relationship between study program and their perception regarding several protein sources. Respondents that for this research are chosen purposively that aligns with the research problem regarding does academic disciplines affect the perception of protein sources. Academic disciplines are divided into four category which is Agri-complex, Pure Sciences, Health Sciences, and Social Humanities. and Brawijaya University that are located in Malang, East Java as the location setting. Eventually 137 samples of Brawijaya University students responded to the online questionnaire. Respondents who fill out the questionnaire came from various academic disciplines which fulfill the need of differentiation that are required for this research to begin. Protein sources that are chosen for the object are based on several considerations and observation on student’s perception supported by literature studies. Animal based protein are represented by chicken meat, beef, and fish, then plant based protein are represented by tofu and tempeh. The findings in this research showed the perceptual mapping of selected protein sources among all various academic disciplines possess a small variance between one another. Overall four academic disciplines agreed that tofu and tempeh becomes the most similar protein pairs among the other 9 protein pairs. Then, chicken meat to tempeh or vice versa become the most relatively easy proteins to shift their protein preferences. Based on the result, there are several implications that need to be discussed. Collaboration are needed to promote food consumption sustainability awareness among college students. Including diet shifting program, increasing consumer acceptance through knowledge and education, and food laws and regulations regarding alternative proteins that are well established. Overall, this dietary shift supports environmental sustainability, health, and economic stability.
