Abstract
Gandum merupakan salah satu komoditas pangan alternatif yang banyak mengandung protein dan karbohidrat. Indonesia merupakan negara pengimpor gandum terbesar kedua di dunia setelah Mesir. Hal ini dikarenakan kebutuhan gandum di Indonesia cukup besar dan kebutuhan gandum di Indonesia tidak tersedia karena tidak memenuhi syarat budidaya. Gandum sendiri memiliki kandungan karbohidrat yang tidak jauh berbeda dengan komoditas serealia lainnya seperti sorgum, jagung, dan beras. Selain itu kandungan proteinnya juga lebih tinggi dibandingkan sorgum, jagung, dan beras. Bahan pangan olahan dari gandum yaitu tepung terigu telah menjadi salah satu alternatif sumber pangan masyarakat Indonesia mulai dari perkotaan hingga pelosok desa. Penelitian ini dilakukan untuk mengetahui apakah perlakuan udara panas pada suhu tinggi efektif menekan infeksi jamur Tilletia indica tanpa mempengaruhi kandungan metabolit sekunder pada biji gandum. English Abstract
Wheat is an alternative food commodity that contains lots of protein and carbohydrates. Indonesia is the second largest wheat importing country in the world after Egypt. This is because the need for wheat in Indonesia is quite large and the demand for wheat is not available in Indonesia because it does not meet the cultivation requirements. Wheat itself has a carbohydrate content that is not much different from other cereal commodities such as sorghum, corn and rice. Apart from that, the protein content is also higher than sorghum, corn and rice. Processed food ingredients from wheat, namely wheat flour, have become an alternative source of food for the Indonesian population from cities to remote villages. This research was conducted to determine whether hot air treatment at high temperatures is effective in suppressing Tilletia indica fungal infections without affecting the secondary metabolite content in wheat grains. The research was carried out from October to December 2023 at the Plant Quarantine Laboratory, Semarang Class 1 Agricultural Quarantine Center and the Faculty of Agriculture, Brawijaya University, specifically at the Pesticide Toxicology Laboratory, Department of Plant Pests and Diseases, Faculty of Agriculture, Brawijaya University. The research consisted of three stages, namely (1) Sampling of wheat with symptoms of Karnal bunt disease and healthy wheat, (2) Macroscopic and microscopic identification of wheat seeds with symptoms, (3) In vitro test of hot air treatment on wheat seeds that had been inoculated with symptomatic seeds treated at temperatures of 70, 85 and 95℃, (4) Phytochemical tests on wheat seeds that have been treated at high temperatures. Samples were obtained from imported wheat seeds that entered the Semarang Class 1 Agricultural Quarantine Center. The results of macroscopic and microscopic identification showed the presence of Tilletia indica in imported wheat seeds. The results of hot air treatment at high temperatures on wheat grains that had been inoculated with symptomatic wheat grains were that effective results were obtained at a treatment temperature of 95 ℃, that is, no mold grew and the lowest treatment level of effectiveness was at a temperature of 70 ℃ because it could still grow mold at around 20 ℃. %. In various high temperature treatments, the results showed that the secondary metabolic compounds present in wheat grains were not affected. Therefore, the results of this study can be the latest report regarding the effectiveness of high temperatures for controlling Tilletia indica fungal infections in imported wheat without reducing the quality of the wheat grain.
