Abstract

Prevalensi balita penderita diare pada tahun 2018 menurut Riskesdas sebesar 11% yang disebabkan karena malabsorpsi laktosa. Pada usia baduta juga terjadi proses fase tumbuh gigi yang dapat menurunkan nafsu makan sehingga menyebabkan ketidakcukupan asupan zat gizi. Alternatif makanan selingan MPASI dan produk susu bebas laktosa dapat dilakukan melalui pengembangan produk pangan berbentuk popsicle dengan bahan dasar tempe, buah nanas, dan sari kulit nanas. Tujuan penelitian ini untuk mengetahui perbedaan kandungan zat gizi makro (protein, lemak, karbohidrat, kadar abu, dan kadar air) dan energi pada popsicle nanas, tempe, dan sari kulit nanas. Penelitian ini menggunakan jenis desain eksperimental Rancangan Acak Lengkap (RAL) sebanyak 5 formulasi dengan 3 kali pengulangan sehingga didapatkan 15 unit percobaan. Variabel bebasnya adalah formulasi nanas : tempe : sari kulit nanas adalah P1 (100%:0:0), P2 (75%:10%:15%), P3 (50%:20%:30%), P4 (25%:30%:45%), dan P5 (0:40%:60%). Uji yang dilakukan adalah uji statistik one way ANOVA dan dilanjutkan dengan uji Post-Hoc Tukey, sedangkan pengujian statistik Kruskal Wallis dilanjutkan dengan uji Mann Whitney dengan tingkat kepercayaan 95%. Kemudian dilakukan penentuan perlakuan terbaik menggunakan Zeleny. Hasil penelitian menunjukkan bahwa terdapat perbedaan yang signifikan pada kadar protein (p=0,000), kadar lemak (p=0,003), kadar abu (p=0.000), kadar air (p=0,015), dan energi (p=0,001), akan tetapi tidak terdapat perbedaan yang signifikan pada kadar karbohidrat (p=0,844). Popsicle perlakuan terbaik didapatkan pada formulasi P5 dengan formulasi nanas : tempe : sari kulit nanas (0:40%:60%). Dalam setiap 50 gram takaran saji menyumbang 68,66% energi dalam sehari, dapat memenuhi protein sebesar 198%, lemak 50%, dan karbohidrat 65,84%.

English Abstract

The prevalence of toddlers with diarrhea in 2018 according to Riskesdas was 11% which was caused by lactose malabsorption. At the age of infants, there is also a teething phase process that can reduce appetite, causing inadequate nutrient intake. Alternatives to complementary foods and lactose-free dairy products can be done through the development of popsicle-shaped food products with the basic ingredients of tempeh, pineapple fruit, and pineapple skin juice. The purpose of this study was to determine the differences in macronutrient content (protein, fat, carbohydrate, ash content, and water content) and energy in pineapple popsicle, tempe, and pineapple peel juice. This study used a completely randomized design (CRD) experimental design of 5 formulations with 3 repetitions so that 15 experimental units were obtained. The independent variables were the formulation of pineapple: tempeh: pineapple peel juice P1 (100%:0:0), P2 (75%:10%:15%), P3 (50%:20%:30%), P4 (25%:30%:45%), and P5 (0:40%:60%). The test performed was a one-way ANOVA statistical test and continued with the Tukey Post-Hoc test, while the Kruskal Wallis statistical test was followed by the Mann Whitney test with a 95% confidence level. Then the best treatment was determined using Zeleny. The results showed that there were significant differences in protein content (p=0.000), fat content (p=0.003), ash content (p=0.000), water content (p=0.015), and energy (p=0.001), but there was no significant difference in carbohydrate content (p=0.844). The best popsicle treatment was obtained in formulation P5 with the formulation of pineapple: tempeh: pineapple peel juice (0:40%:60%). In every 50 gram serving size contributes 68.66% of energy in a day, can fulfill 198% protein, 50% fat, and 65.84% carbohydrate.
