Abstract

Apel (Malus sylvestris) adalah tanaman yang dapat dibudidayakan di negara beriklim tropis seperti Indonesia. Salah satu daerah penghasil apel tertinggi di Indonesia adalah Kota Batu. Buah apel adalah komoditas pertanian yang menjadi ikon Kota Wisata Batu dengan berbagai jenis produk olahan. Salah satu hasil olahan buah apel, yaitu keripik apel. Perusahaan Gapura merupakan usaha kecil yang bergerak dalam pengolahan produk keripik buah di Kota Batu, Jawa Timur. Awal 2020 lalu, penjualan produk keripik apel di Perusahaan Gapura terus mengalami peningkatan sejak awal pendirian, namun usaha sempat terjadi penurunan penjualan akibat pandemi Covid-19. Pasca pandemi jumlah penjualan kembali meningkat meski belum pulih. Sehubungan dengan hal tersebut muncul permasalahan terkait dengan pemborosan dalam kegiatan produksi Perusahaan Gapura. Tujuan dari penelitian ini adalah untuk memberikan usulan perbaikan guna mereduksi pemborosan yang terjadi pada proses produksi keripik apel di UKM Gapura. Metode yang digunakan adalah pendekatan lean manufacturing dengan metode Value Stream Mapping dan diagram fishbone. Tools yang digunakan berdasarkan analisis VALSAT, yaitu process activity mapping, supply chain response matrix, quality filter mapping, dan demand amplification mapping. Hasil penelitian menunjukkan pengurangan waktu terhadap 6 aktivitas kategori NNVA dan penggabungan 2 aktivitas NNVA dalam proses produksi keripik apel. Pengurangan waktu tertinggi pada proses penempatan dan penirisan dalam keranjang, dengan pengurangan waktu sebanyak 19,671 menit. Hasil reduksi waktu standar proses pengolahan keripik apel adalah 44,764 menit, dari waktu awal 1.809,24 menit menjadi 1.764,472 menit.

English Abstract

Apple (Malus sylvestris) is a plant that can be cultivated in tropical countries like Indonesia. One of the highest apple producing areas in Indonesia is Batu City. Apples has become an icon of Batu Tourism City with various types of processed products, such as apple chips. Gapura Company is a small business engaged in processing apple chips products in Batu City. In early 2020, sales of apple chip products at Gapura Company have continued to increase since the beginning of the establishment, but the business had a decline in sales due to the Covid-19 pandemic. After the pandemic, the number of sales has increased again although it has not yet recovered. Problems arise related to waste in the production activities of the Gapura Company. The purpose of this study is to provide improvement proposals to reduce waste that occurs in the apple chip production process at Gapura SMEs. The method used is a lean manufacturing approach with the Value Stream Mapping method and fishbone diagram. The tools used are based on VALSAT analysis, namely process activity mapping, supply chain response matrix, quality filter mapping, and demand amplification mapping. The results showed a reduction in time for 6 NNVA category activities and the merging of 2 NNVA activities. The highest time reduction was in the basket placement and draining process, with a time reduction of 19,671 minutes. The result of reducing the standard processing time for apple chips is 44.764 minutes, from the initial time of 1,809.24 minutes to 1,764.472 minutes.
