Abstract

This research location was in Susu Ketan Pak Yan, a small enterprise located in Batu City. The research aimed to determine the product, information, and financial flow and the relationship among members along supply chain management (SCM) in this café, to examine the marketing margin (MM) and marketing efficiency (ME) in this café and to investigate components of SCM of milk in this café. The sampling frame of the research: one manager of the café, 13 dairy farmers, and 85 end consumers of the café. The data was collected from November 17 to December 11 2022, through direct survey, interview and questionnaires. Descriptive analyses was used in this research. The result showed that the flow of information, product, financial had two ways supported by technology. The relationship between members of supply chain were mostly coordination. Original milk supplied directly from dairy farmer is the most efficient in terms of MM (42.86%) and ME (PS = 57.14%) in this research. Milk that were supplied by the intermediary as the most inefficient menu in terms of MM (74.5%) and ME (PS = 25.5%) in this research. This café can be a role model for another café to apply technology in every flow.
