Abstract
Rata-rata konsumsi fosfor dan zinc pada anak usia sekolah dibawah rekomendasi Angka Kecukupan Gizi. Sarapan dapat memenuhi 15-30% kebutuhan zat gizi dalam sehari, namun ditemukan bahwa asupan sarapan pada anak usia sekolah belum memenuhi 15% kebutuhan zat gizi sehari. Sereal merupakan sarapan yang mudah dipersiapkan dan diminati, salah satu bentuk sereal adalah cornflakes. Cornflakes diinovasikan dengan penggunaan bahan makanan lokal meliputi tepung mocaf, tempe dan isolat protein kedelai dengan kandungan fosfor masing-masing 64mg; 326 mg dan 500-800 mg per 100 gram dan kandungan zinc masing-masing 0,6 mg; 1,7 mg; dan 4-9 mg per 100 gram bahan. Penelitian ini menggunakan rancangan acak lengkap (RAL). Perlakuan dari penelitian ini adalah perbandingan proporsi tempe dan isolat protein kedelai (IPK) yaitu P0 Kontrol (Cornflakes Mocaf), P1 (Cornflakes Mocaf : 25 g Tempe), P2 (Cornflakes Mocaf : 50 g tempe : 20 g IPK) dan P3 (Cornflakes Mocaf : 75 g tempe : 40 g IPK). Variabel terikat yang diukur adalah kadar fosfor dan zinc pada cornflakes mocaf dengan penambahan tempe dan isolat protein kedelai. Pengukuran kadar fosfor dilakukan dengan spektrometer UV-Vis dan pengukuran kadar zinc dilakukan dengan spektrometer serapan atom. Uji perbedaan kadar fosfor menggunakan uji non parametrik Kruskal-Wallis Test, sedangkan uji perbedaan kadar zinc dengan uji Anova Welch. Ditemukan perbedaan kadar fosfor antara kontrol dengan kelompok perlakuan, kadar fosfor tertinggi terdapat pada P3 (Cornflakes Mocaf : 75 g tempe : 40 g IPK) dengan kandungan fosfor 333,04 mg per 100 gram. Ditemukan pula perbedaan kadar zinc antara kontrol dengan kelompok perlakuan, kadar zinc tertinggi terdapat pada P3 (Cornflakes Mocaf : 75 g tempe : 40 g IPK) yaitu 23,20 mg per 100 gram.
English Abstract
The average consumption of phosphorus and zinc in school-age children is below the recommended Nutrient Adequacy Ratio. Breakfast can fulfill 15-30% of nutritional needs in a day, but it was found that breakfast intake in school-age children has not met 15% of daily nutritional needs. Cereal is a breakfast that is easy to prepare and in demand, flakes is one of the cereal. Cornflakes were innovated by using local food ingredients including mocaf flour, tempeh and soy protein isolate (ISP) with a phosphorus content respectively 64mg; 326 mg and 500-800 mg per 100 grams and zinc content respectively 0.6 mg; 1.7 mg; and 4-9 mg per 100 grams. This research was using completely randomized design (CRD). The formulation of this study were differentiated by the proportion of tempeh and isolated soy protein (ISP) that were P0 Control (Cornflakes Mocaf), P1 (Cornflakes Mocaf : 25 g Tempeh), P2 (Cornflakes Mocaf : 50 g Tempeh : 20 g ISP) and P3 (Cornflakes Mocaf : 75 g Tempe : 40 g ISP). The dependent variables measured were phosphorus and zinc levels in cornflakes mocaf with the addition of tempeh and soy protein isolate. Phosphorus levels were measured using a UV-Vis spectrometer and zinc levels were measured using an atomic absorption spectrometer (AAS). The test for differences in phosphorus levels used the nonparametric Kruskal-Wallis test, while the difference in zinc levels was tested using the Anova Welch test. It was found that there were differences in phosphorus levels between controls with and treatment groups, the highest phosphorus levels were found in P3 (Cornflakes Mocaf: 75 g tempeh: 40 g ISP) with a phosphorus content of 333.04 mg per 100 grams. It was also found that there were differences in zinc levels between the control and and treatment groups, the highest zinc levels were found in P3 (Cornflakes Mocaf: 75 g tempeh: 40 g ISP) which was 23.20 mg per 100 grams.
