Abstract
terutama ikan lele membuat para pengusaha berinovasi membuat olahan makanan yang berasal dari ikan dengan harapan dapat menarik minat masyarakat terhadap produk perikanan. Terciptanya inovasi olahan makanan yang berasal dari ikan (frozen food) juga didasari oleh rendahnya harga jual ikan lele di pasaran. Oleh karena itu, P2MKP Fish Boster Centre sebagai tempat pelatihan dan budidaya ikan lele dengan sistem boster juga berinovasi menciptakan olahan makanan (frozen food) yang berasal dari lele berupa fillet lele dengan tujuan menciptakan olahan lele yang berkualitas dan terjamin kualitasnya karena bahan bakunya sudah dikontrol sejak pemilihan induknya sehingga dapat lebih menarik masyarakat terhadap produk olahan ikan. Penelitian ini dilaksanakan pada bulan Mei 2023 di P2MKP Fish Boster Centre, Sidoarjo. Penelitian ini bertujuan untuk 1) menganalisis kelayakan usaha frozen food pada P2MKP Fish Boster Centre dari aspek non finansial, 2) menganalisis kelayakan usaha frozen food pada P2MKP Fish Boster Centre dari aspek finansial jangka pendek dan jangka panjang meliputi permodalan, biaya tetap, biaya variabel, penerimaan, keuntungan, BEP, R/C Rasio, NPV, IRR, Net B/C dan Payback Period (PP) dan 3) menganalisis sensitivitas usaha pada P2MKP Fish Boster Centre. Jenis penelitian yang dilakukan yaitu deskriptif kuantitatif dengan jenis data primer dan data sekunder. Teknik pengambilan data dilakukan dengan metode observasi, wawancara dan dokumentasi. Analisis data dilakukan dengan dua cara yaitu analisis kualitatif (aspek teknis, aspek manajemen, aspek pemasaran, aspek sosial ekonomi dan aspek lingkungan) serta analisis kuantitatif (aspek finansial jangka pendek dan aspek finansial jangka panjang). Berdasarkan hasil penelitian pada usaha fillet lele yang dilakukan oleh Fish Boster Centre dapat diketahui bahwa 1) Kondisi kelayakan usaha pada aspek non finansial (aspek teknis, aspek manajemen, aspek pemasaran, aspek sosial ekonomi dan aspek lingkungan); 2) Kondisi kelayakan usaha pada aspek finansial jangka pendek diperoleh hasil R/C Ratio sebesar 1,22; keuntungan sebesar Rp. 187.283.200; rentabilitas 21,5%; dan volume produksi lebih besar daripada nilai BEP, sehingga dari hasil analisis tersebut dapat diketahui bahwa usaha ini menguntungkan; 3) Kondisi kelayakan usaha pada aspek finansial jangka panjang diperoleh hasil bahwa usaha fillet lele ini dikatakan layak karena seluruh nilainya telah memenuhi kriteria dari nilai yang telah ditetapkan, dimana NPV sebesar Rp. 858.739.291; IRR sebesar 86%; Net B/C sebesar 4,96; dan PP selama 1,30 tahun.; 4) Analisis sensitivitas dilakukan dengan 3 asumsi (kenaikan biaya 18%, penurunan benefit 15%, kenaikan biaya 3% dan penurunan benefit 12%). Saran yang perlu dilakukan oleh pihak Fish Boster Centre adalah perlu meningkatkan promosi produk baik secara online maupun offline agar lebih banyak masyarakat yang mengenal produknya dan dapat meningkatkan jumlah penjualannya.
English Abstract
The low public interest in fishery products in the form of fresh fish, especially catfish, has prompted entrepreneurs to innovate in making fish-based food preparations in the hope of attracting public interest in fishery products. The creation of innovations in processed food derived from fish (frozen food) is also based on the low selling price of catfish in the market. Therefore, the P2MKP Fish Booster Center as a place for training and cultivating catfish with a booster system also innovates to create processed food (frozen food) derived from catfish in the form of catfish fillets with the aim of creating processed catfish of high quality and guaranteed quality because the raw materials have been controlled since the selection of the parent so that it can attract the public more towards processed fish products. This research was conducted in May 2023 at the P2MKP Fish Booster Center, Sidoarjo. This study aims to 1) analyze the feasibility of the frozen food business at the P2MKP Fish Boster Center from a non-financial aspect, 2) analyze the feasibility of the frozen food business at the P2MKP Fish Boster Center from short-term and long-term financial aspects including capital, fixed costs, variable costs, acceptance, profit, BEP, R/C ratio, NPV, IRR, Net B/C and Payback Period (PP) and 3) analyzing business sensitivity at the P2MKP Fish Boster Center. The type of research conducted is descriptive quantitative with primary data and secondary data. Data collection techniques were carried out by observation, interview and documentation methods. Data analysis was carried out in two ways, namely qualitative analysis (technical aspects, management aspects, marketing aspects, socio-economic aspects and environmental aspects) and quantitative analysis (short-term financial aspects and long-term financial aspects). Based on the results of research on the catfish fillet business carried out by the Fish Boster Center, it can be seen that 1) Business feasibility conditions in non-financial aspects (technical aspects, management aspects, marketing aspects, socio-economic aspects and environmental aspects); 2) Business feasibility conditions in the short-term financial aspect obtained an R/C Ratio of 1.22; profit of Rp. 187,283,200; profitability 21.5%; and the production volume is greater than the BEP value, so from the results of this analysis it can be seen that this business is profitable; 3) The condition of business feasibility in the long-term financial aspect is that the catfish fillet business is said to be feasible because the entire value meets the criteria of the value that has been determined, where the NPV is IDR. 858,739,291; IRR of 86%; Net B/C of 4.96; and PP for 1.30 years; 4) Sensitivity analysis was carried out with 3 assumptions (18% increase in costs, 15% decrease in benefits, 3% increase in costs and 12% decrease in benefits). The suggestion that needs to be made by the Fish Boster Center is to increase product promotion both online and offline so that more people know about their products and can increase the number of sales.
