Abstract
Minuman berperisa merupakan produk minuman yang diperoleh dari pencampuran air minum dengan bahan perisa dan gula dengan atau tanpa penambahan bahan pangan lain melalui proses pemanasan. Salah satu produsen minuman berperisa adalah UMKM Sumber Rejeki yang memproduksi minuman berperisa buah apel. Produksi UMKM Sumber Rejeki semakin meningkat namun masih banyak ketidaksesuaian dari penerapan CPPOB dan belum melakukan pendugaan umur simpan terkait produknya. Berdasarkan permasalahan tersebut, penelitian ini dilakukan untuk membantu UMKM dalam penyusunan dokumen CPPOB dan menduga umur simpan minuman berperisa buah apel menggunakan metode Accelerated Shelf Life-Test (ASLT) model Arrhenius. Penelitian dilakukan dengan survei lokasi, studi literatur, analisis ketidaksesuaian, perencanaan dan implementasi usulan perbaikan, dan pembuatan dokumen CPPOB. Pendugaan umur simpan dilakukan dengan Metode ASLT model Arrhenius dimana produk disimpan pada lingkungan yang dapat menyebabkan produk cepat rusak dengan kondisi suhu yang lebih tinggi. Penelitian dilakukan dengan penentuan karakteristik mutu dengan uji organoleptik oleh panelis tidak terlatih setiap 7 hari sekali. Data perubahan mutu untuk menghasilkan model kinetika kerusakan mutu dilakukan penyimpanan pada suhu 30oC, 35oC, dan 45oC. Parameter yang diamati berupa total asam tertitrasi, pH, total padatan terlarut (TPT), dan warna. Analisis dilakukan setiap tujuh hari sekali. Hasil penelitian setelah dilakukan gap assessment ditemukan ketidaksesuaian minor sebanyak 9 dan ketidaksesuaian major sebanyak 15 dari 68 klausul. Oleh karena itu, UMKM Sumber Rejeki mendapatkan rating C dalam penerapan CPPOB. Berdasarkan rating tersebut harus dilakukan perbaikan ketidaksesuaian CPPOB meliputi perbaikan fisik, dokumen CPPOB, SSOP, SOP, dan formulir pencatatan. UMKM Sumber Rejeki sudah melakukan perbaikan sehingga rating penerapan CPPOB berubah menjadi A. Pada hasil penelitian pendugaan umur simpan, panelis menolak produk pada hari ke-77 sehingga diperoleh mutu akhir minuman berperisa buah apel yaitu pH sebesar 4,467, total asam tertitrasi sebesar 0,349%. Tingkat kecerahan (L*) warna sebesar 52,433, intensitas warna merah (a*) sebesar 2,367, intensitas warna kuning (b*) sebesar 22,433, dan total padatan terlarut sebesar 8,303 oBrix. Parameter yang digunakan untuk pendugaan umur simpan adalah total asam tertitrasi karena memiliki energi aktivasi terendah yaitu 4210,5186 kal/mol, sedangkan persamaan regresi linier dari model Arrhenius parameter total asam tertitrasi adalah y = -2120,1x + 0,6739 dengan nilai R2 sebesar 0,9993. Umur simpan minuman berperisa buah apel pada suhu ruang (25oC) adalah 267,62 hari atau 8,92 bulan.
English Abstract
Flavored drink are products obtained by mixing drinking water with flavoring substances and sugar, with or without the addition of other food ingredients through a heating process. One of the producers of flavored beverages is UMKM Sumber Rejeki, which produces apple-flavored beverages. The production of UMKM Sumber Rejeki has been increasing, but there are still many non-compliances with the implementation of Good Manufacturing Practices (GMP) and no estimation of shelf life for their products. Based on these issues, this study was conducted to assist UMKM in preparing GMP documents and estimate the shelf life of appleflavored beverages using the Accelerated Shelf Life Test (ASLT) method with the Arrhenius model. The research was conducted through location surveys, literature reviews, analysis of non-compliances, planning and implementation of proposed improvements, and the development of GMP documents. The shelf life estimation was performed using the ASLT method with the Arrhenius model, where the product was stored in an environment that could cause rapid deterioration, with higher temperatures. The research was carried out by determining quality characteristics through sensory evaluations by untrained panelists every 7 days. The data on quality changes were used to generate a kinetic model of quality deterioration, with storage temperatures of 30°C, 35°C, and 45°C. The parameters observed were total titratable acidity, pH, total dissolved solids (TDS), and color. The analysis was conducted every 7 days. The results of the research, after conducting a gap assessment, revealed 9 minor non-compliances and 15 major non-compliances out of 68 clauses. Therefore, UMKM Sumber Rejeki received a rating of C in the implementation of GMP. Based on this rating, improvements in GMP non-compliances were required, including physical improvements, GMP documents, SSOP, SOP, and record forms. UMKM Sumber Rejeki made the necessary improvements, resulting in an upgraded rating of A for GMP implementation. In terms of shelf life estimation, the panelists rejected the product on the 77th day, resulting in the final quality of the apple-flavored beverage: pH of 4.467, total titratable acidity of 0.349%, brightness level (L*) of 52.433, red color intensity (a*) of 2.367, yellow color intensity (b*) of 22.433, and total dissolved solids of 8.303 oBrix. The parameter used for shelf life estimation was total titratable acidity due to its lowest activation energy of 4210.5186 cal/mol. The linear regression equation from the Arrhenius model for the total titratable acidity parameter was y = -2120.1x + 0.6739 with an R2 value of 0.9993. The shelf life of apple-flavored beverages at room temperature (25°C) was estimated to be 267.62 days or 8.92 months.
