Abstract

Tujuan penelitian ini yaitu untuk mengevaluasi perubahan sifat fisik pada komoditas pisang raja dengan menggunakan metode pengeringan di bawah sinar matahari langsung. Penelitian menggunakan perlakuan ketebalan (3, 5, dan 7 mm) dan perendaman (kontrol, larutan garam dapur, dan larutan lemon). Hasil studi menunjukkan bahwa selama pengeringan mengalami penurunan kadar air. Fenomena laju pengeringan mengalami laju jatuh dan laju kostan yang dapat dilihat pada kurva. Selain itu, karakteristik fisik seperti warna, tekstur, perubahan diameter, dan perubahan ketebalan mengalami perubahan selama pengeringan. Hasil evaluasi data secara keseluruhan menunjukkan bahwa sampel dengan ketebalan 3 mm dan perendaman ektrak lemon memberikan hasil yang lebih baik. Hasil penelitan pada perlakuan tersebut menunjukkan kadar air akhir pengeringan hingga 7.91 %bb. Kemudian, laju pengeringan paling puncak sebesar 0.217 %bb/jam, penyusutan ketebalan akhir yaitu 57.78%, penyusutan diameter 52.22%, L* 84.29, a* 12.29, dan b* 30.35.

English Abstract

The purpose of this study was to evaluate changes in physical properties of plantain commodities using the drying method under direct sunlight. The study used thickness treatment (3, 5, and 7 mm) and immersion (control, salt solution, and lemon solution). The results of the study showed that during drying the water content decreased. The phenomenon of drying rate experienced a falling rate and constant rate which can be seen on the curve. In addition, physical characteristics such as color, texture, diameter change, and thickness change undergo changes during drying. The results of the overall data evaluation showed that samples with a thickness of 3 mm and lemon extract immersion gave better results. The results of the research on the treatment showed that the final moisture content of drying was up to 7.91% wt. Then, the highest drying rate is 0.217 %ww/hour, the final thickness shrinkage is 57.78%, diameter shrinkage is 52.22%, L* 84.29, a* 12.29, and b* 30.35.
