Abstract

Ayam pedaging atau broiler memiliki peran penting sebagai sumber protein hewani yang sering dikonsumsi. Dalam konteks produksi ternak, penilaian sering dilakukan berdasarkan karkas ayam broiler karena keterkaitannya dengan berat hidupnya. Industri Rumah Potong Ayam (RPA) memainkan peran penting dalam memotong ayam hidup dan mengolahnya menjadi karkas yang siap dikonsumsi. Permintaan yang tinggi terhadap karkas broiler di Kabupaten Klaten menciptakan persaingan antara pengusaha RPA, mendorong peningkatan pelayanan. Penelitian dilakukan untuk mengevaluasi efisiensi usaha RPA di Kabupaten Klaten dengan membandingkan penggunaan input pada beberapa RPA. Pendekatan deskriptif kuantitatif digunakan dengan metode Data Envelopment Analysis (DEA) untuk menganalisis tingkat efisiensi teknis dari usaha RPA dan analisis kelayakan finansial yang mempengaruhi harga produk daging segar broiler di beberapa RPA. Hasil penelitian menunjukkan bahwa efisiensi teknis pada enam usaha RPA di Kabupaten Klaten cukup tinggi, dengan penggunaan input produksi yang optimal. Faktor-faktor yang mempengaruhi perbedaan harga produk daging segar broiler antara RPA adalah skala usaha, harga perolehan ayam hidup, potongan harga ayam hidup dari PT yang memiliki kandang plasma, dan sistem pemasaran yang digunakan oleh masing-masing RPA. Saran terkait penelitian ini adalah pengalokasian input operasional produksi yang perlu dievaluasi dan disesuaikan dengan skala usaha masing-masing RPA. Evaluasi juga diperlukan terkait penggunaan tenaga kerja, penghitungan HOK, dan pembayaran upah yang belum sesuai. Penting bagi pelaku usaha RPA untuk memperhatikan jumlah ayam broiler hidup yang akan dipotong dan harga yang ditetapkan untuk mengantisipasi volatilitas harga ayam potong broiler dan daging segar.

English Abstract

Broiler chickens play a crucial role as a frequently consumed animal protein source. In the context of livestock production, the assessment is often based on the broiler chicken carcass due to its correlation with live weight. The Poultry Processing Industry (PPI) plays a significant role in slaughtering live chickens and processing them into ready-to-consume carcasses. The high demand for broiler carcasses in Klaten Regency creates competition among PPI entrepreneurs, driving improvements in services. The research was conducted to evaluate the efficiency of PPI businesses in Klaten Regency by comparing the input utilization among several PPIs. A quantitative descriptive approach was employed using the Data Envelopment Analysis (DEA) method to analyze the level of technical efficiency of PPI businesses and the financial feasibility analysis influencing the price of fresh broiler meat products in several PPIs. The research findings indicated that the technical efficiency of the six PPI businesses in Klaten Regency is relatively high, with optimal utilization of production inputs. Factors affecting the price difference of fresh broiler meat products among PPIs include the scale of operations, the acquisition price of live chickens, discounts on live chickens from PT with plasma farms, and the marketing systems used by each PPI. Recommendations regarding this research include the evaluation and adjustment of operational production inputs according to the scale of operations of each PPI. Evaluation is also necessary concerning labor utilization, calculation of HOK (hours of labor per kilogram), and wage payments that are currently not in line with standards. It is crucial for PPI practitioners to consider the number of live broiler chickens to be slaughtered and the pricing set to anticipate price volatility of slaughtered broiler chickens and fresh meat.
