Abstract
Tanaman lengkuas (Alpinia galanga L.) merupakan salah satu jenis tumbuhan rempahrempah yang dapat ditemukan di dataran tinggi maupun dataran rendah di Indonesia. Lengkuas banyak dimanfaatkan sebagai campuran bumbu masak maupun untuk pengobatan tradisional. Selain tanaman lengkuas, tanaman lain yang banyak dimanfaatkan dalam pengobatan tradisional adalah temulawak (Curcuma xanthorrhiza L.). Tanaman lengkuas dan temulawak banyak dimanfaatkan sebagai obat tradisional karena mengandung senyawa utama fenol dan flavonoid yang dapat dimanfaatkan untuk meredakan rasa lelah yaitu senyawa galangin yang bersifat semi polar. Bubuk lengkuas maupun bubuk temulawak dalam proses pembuatannya melalui proses ekstraksi evaporasi menggunakan mesin vakum (vacuum evaporator). Data dioptimasi menggunakan pemodelan Response Surface Methodology dengan Central Composite Design (CCD). Analisis lengkuas menggunakan data pengaruh variasi suhu (41oC, 45oC dan 49oC) serta rasio jumlah pelarut aquades (1:1, 1:2 dan 1:3). Hasil analisa fenol menemukan titik optimum dengan hasil 2FI dan hasil analisa flavonoid menemukan titik optimum dengan hasil quadratic. Titik tertinggi pada analisa lengkuas, pada perlakuan suhu sebesar 49oC dan perbandingan konsentrasi aquades 1:1 (100%), fenol yang diperoleh sebesar 0,1758 mg GAE/g dan flavonoid sebesar 0,7759 mg QE/g dengan desaribility 0,5450. Bubuk temulawak menggunakan data pengaruh variasi suhu (36oC hingga 45oC) serta rasio jumlah maltodekstrin (1:2, 1:4 dan 1:6). Hasil analisa fenol dan flavonoid menemukan titik optimum dengan hasil quadratic. Titik tertinggi pada analisa bubuk temulawak, pada perlakuan suhu sebesar 45oC dan perbandingan konsentrasi maltodekstrin 1:2 (50%), fenol yang diperoleh sebesar 3,7132 mg GAE/g dan flavonoid sebesar 6,2643 mg QE/g dengan desaribility 1.
English Abstract
Galangal plant (Alpinia galanga L.) is one type of spice plant that can be found in the highlands and lowlands in Indonesia. Galangal is widely used as a mixture of cooking spices and for traditional medicine. In addition to galangal plants, another plant that is widely used in traditional medicine is curcuma (Curcuma xanthorrhiza L.). Galangal and curcuma plants are widely used as traditional medicine because they contain the main compounds phenols and flavonoids that can be used to relieve fatigue, namely galangin compounds that are semipolar. Galangal powder and curcuma powder in the manufacturing process through an evaporation extraction process using a vacuum machine (vacuum evaporator). Data was optimized using Response Surface Methodology modeling with Central Composite Design (CCD). Galangal analysis uses data on the influence of temperature variations (41oC, 45oC and 49oC) and the ratio of the number of solvents of aquades (1:1, 1:2 and 1:3). The results of phenol analysis found the optimum point with 2FI results and the flavonoid analysis results found the optimum point with quadratic results. The highest point in galangal analysis, at a temperature treatment of 49oC and a ratio of aquades concentration of 1: 1 (100%), phenol obtained by 0,1758 mg GAE/g and flavonoids of 0,7759 mg QE/g with a desaribility of 0,5450. Curcuma powder uses data on the influence of temperature variations (36oC to 45oC) and the ratio of maltodextrin amounts (1:2, 1:4 and 1:6). The results of phenol and flavonoid analysis found the optimum point with quadratic results. The highest point in the analysis of ginger powder, at a temperature treatment of 45oC and a ratio of maltodextrin concentration of 1:2 (50%), phenol obtained by 3,7132 mg GAE/g and flavonoids of 6,2643 mg QE/g with desaribility 1.
