Salah satu upaya yang dapat dilakukan yaitu membuat modifikasi makanan fungsional yang tinggi serat berupa bakso analog. Bahan dasar bakso analog adalah jamur shiitake dan tepung kedelai, jamur shiitake memiliki kandungan serat yang tinggi yakni 37,4% dan mengandung senyawa bioaktif seperti β-glukan dan eritadenin untuk mengatasi masalah obesitas. Tepung kedelai dipilih karena memiliki kandungan protein tinggi sebesar 36,44 – 40,55% untuk memenuhi kriteria bakso berdasarkan SNI 01-3818:2014, kedelai juga sebagai sumber serat pangan yang memiliki kandungan 5,56 – 8,58%. Penelitian ini bertujuan mengetahui perbedaan kadar serat pangan larut air, serat pangan tak larut air dan total serat pangan pada bakso analog. Metode penelitian menggunakan Rancangan Acak Lengkap (RAL) dengan tiga pengulangan pada empat perlakuan dengan perbandingan jamur shiitake dan tepung kedelai secara berurutan yaitu P0 (100:0), P1 (90:10), P2 (80:20), dan P3 (70:30). Kandungan serat pangan pada masing-masing perlakuan yang diuji menggunakan metode enzimatis AOAC. Hasil penelitian tidak ada perbedaan signifikan untuk kadar serat pangan larut, serat pangan tak larut, dan total serat pangan pada penelitian ini. Rata-rata hasil penelitian ini didapatkan perlakuan P0 (100:0) memiliki kadar serat pangan yang paling tinggi, yakni serat pangan larut (0,78%), serat pangan tak larut (1,75%), dan total serat pangan (2,52%). Kesimpulan penelitian ini perlakuan terbaik adalah P0 yakni perlakuan kontrol 100% jamur shiitake yang memiliki kandungan serat pangan yang lebih tinggi daripada perlakuan lainnya.
English Abstract
Obesity is a condition of excessive fat accumulation and can interfere with health because it is a "gateway" for other degenerative diseases. One effort that can be done is to modify functional foods that are high in fiber in the form of analog meatballs. The basic ingredients of analog meatballs are shiitake mushrooms and soybean flour, shiitake mushrooms have a high fiber content of 37,4% and contain bioactive compounds such as β-glucan and eritadenin to overcome obesity problems. Soybean flour was chosen because it has a high protein content of 36.44 - 40.55% to meet the criteria for meatballs based on SNI 01-3818:2014, soybeans are also a source of dietary fiber which has a content of 5.56 - 8.58%. This study aims to determine the difference in levels of soluble dietary fiber, insoluble dietary fiber and total dietary fiber in analog meatballs. The research method used a Completely Randomized Design with three repetitions in four treatments with a ratio of shiitake mushrooms and soybean flour sequentially, namely P0 (100:0), P1 (90:10), P2 (80:20), and P3 (70). :30). Food fiber content in each treatment was tested using the AOAC enzymatic method. The results showed that there was no significant difference in the levels of soluble dietary fiber, insoluble dietary fiber, and total dietary fiber in this study. The average results of this study showed that treatment P0 (100:0) had the highest dietary fiber content, namely soluble dietary fiber (0.78%), insoluble dietary fiber (1.75%), and total dietary fiber (2 ,52%). The conclusion of this study is that the best treatment is P0 which is a control treatment of 100% shiitake mushrooms which has a higher dietary fiber content than other treatments.
