Abstract

CV. Ramayana Agro Mandiri merupakan salah satu agroindustri oleh-oleh khas Batu berskala kecil menengah yang memproduksi berbagai olahan makanan salah satunya adalah dodol buah. Perusahaan telah memiliki dokumen Standard Operating Procedure (SOP) yang berlaku namun tempat produksi mengalami perpindahan lokasi, sehingga diperlukan adanya dokumen SOP baru yang disesuaikan dengan kondisi di lapangan. SOP diperlukan untuk meningkatkan efektivitas proses produksi serta menyeragamkan mutu produk. Adanya dokumen SOP juga memudahkan perusahaan untuk mengevaluasi kinerja dalam perusahaan. Tujuan dari penelitian adalah untuk menyusun, memverifikasi, dan melakukan evaluasi untuk melihat kesesuaian antara dokumen dengan kondisi di lapangan. Penyusunan dokumen SOP diawali dengan observasi kondisi perusahaan disertai wawancara dengan pemilik usaha terkait kondisi di lapangan. Selanjutnya dilakukan penyusunan dokumen dengan mengacu pada beberapa literatur dan peraturan terkait. Terdapat tujuh dokumen SOP yang disusun meliputi SOP penerimaan dan sortasi bahan baku, persiapan alat dan bahan baku, pemasakan, pengemasan, penyimpanan, distribusi, dan pemeliharaan mesin dan alat. Dokumen SOP juga dilengkapi dengan bagian pendahuluan, gambaran umum, serta kebersihan dan kesehatan karyawan. Dokumen SOP yang disusun kemudian diverifikasi serta dievaluasi. Verifikasi keseluruhan implementasi SOP terhadap produk dodol apel melalui pengujian dodol apel yang diproduksi sebelum dan setelah implementasi dokumen SOP baru di perusahaan. Pengujian yang dilakukan meliputi uji cemaran mikroba yaitu uji Angka Lempeng Total (ALT) dan Angka Kapang Khamir (AKK) serta uji proksimat yaitu uji kadar lemak, air, aktivitas air Uji ALT dan AKK menunjukkan bahwa sampel dodol apel sebelum dan setelah implementasi telah sesuai dengan standar SNI, adapun hasil verifikasi adalah sebagai berikut: nilai ALT dodol apel sebelum implementasi sebesar 4,8 x 102 CFU/ml dan setelah implementasi sebesar 3,1 x 102 CFU/ml; nilai AKK dodol apel sebelum dan setelah implementasi sebesar <3,0 x 102 (1,0 x 102) CFU/ml. Uji kadar lemak, kadar air, dan aktivitas air menunjukkan bahwa sampel dodol apel sebelum dan setelah implementasi telah sesuai dengan standar SNI. Analisis data dengan Uji-T menunjukkan bahwa tidak ada perbedaan kadar lemak, kadar air, dan aktivitas air yang nyata antara dodol apel sebelum dan setelah implementasi. Dodol apel setelah implementasi memiliki kadar lemak, kadar air, dan aktivitas air yang lebih seragam ditandai dengan nilai standar deviasi yang lebih rendah dibandingkan sebelum implementasi. Evaluasi dilakukan untuk memastikan kesesuaian antara isi dokumen SOP dengan penyelenggaraannya. Evaluasi dilakukan berdasarkan saran dan tanggapan dari perusahaan.

English Abstract

CV. Ramayana Agro Mandiri is one of the agro-industries souvenirs of Batu city which produces various processed foods, one of them is fruit dodol. The company already has a valid Standard Operating Procedure (SOP) document, but the production site has changed location, so a new SOP document is needed that is adapted to conditions in the field.. SOP is needed to increase the effectiveness of the production process and to standardize product quality. The existence of SOP documents also makes it easier for companies to evaluate performance within the company. The purpose of the research is to compile, verify, and to evaluate the suitability between the documents and the conditions in the field. The preparation of the SOP document begins with observing the condition of the company accompanied by interviews with owners regarding conditions in the field. Furthermore, the preparation of documents with reference to several relevant literature and regulations. There are seven SOP documents containing SOP for receiving and sorting raw materials, preparation of tools and raw materials, cooking, packaging, storage, distribution, and maintenance of machines and tools. The SOP document is also equipped with an introductory section, an overview, and employee hygiene and health. SOP documents compiled are then verified and evaluated. Verification of the entire implementation of the SOP for apple dodol products through testing of the apple dodol produced before and after the implementation of the new SOP documents at the company. . Verification of the data through Total Plate Count (TPC), Total Yeast and Mold Count (TYMC) as well as the proximate test, fat content, moisture content, and water activity TPC and TYMC showed that the apple dodol samples before and after implementation complied with SNI standards, while the verification results were as follows: TPC of apple dodol before implementation was 4,8 x 102 CFU/ml and after implementation it was 3,1 x 102 CFU/ml; TYMC of apple dodol before and after implementation was <3,0 x 102 (1,0 x 102 ) CFU/ml. Tests for fat content, moisture content, and water activity showed that the apple dodol samples before and after implementation complied with SNI standards. Data analysis by T-test showed that there were no significant differences in fat content, moisture content, and water activity between apple dodol before and after implementation. Apple dodol after implementation had more uniform fat content, moisture content, and water activity which was indicated by a lower standard deviation value than before implementation. Evaluation is carried out to ensure conformity between the contents of the SOP document and its implementation. The evaluation is carried out based on suggestions and responses from the company.
