Abstract
Pertumbuhan usaha pengolahan pangan di Indonesia mengalami peningkatan di setiap tahunnya. Peningkatan tersebut menuntut pelaku usaha untuk lebih kreatif dan menonjolkan keunikan/kelebihan dari produknya masing-masing. Unit usaha Somano Surabaya adalah salah satu usaha yang menggunakan tanaman mangrove sebagai bahan baku untuk kemudian diolah menjadi produk pangan berupa sirup buah mangrove. Penjualan produk dari unit usaha Somano tergolong masih fluktuatif, unit usaha Somano memasarkan mayoritas produknya kepada wisatawan di Wisata Mangrove Wonorejo Surabaya. Analisis pada aspek teknis dan finansial dilakukan untuk mengetahui apakah produksi sirup buah mangrove Somano layak untuk jangka panjang atau tidak. Analisis kelayakan teknis dilakukan untuk menilai kelayakan dari berbagai faktor seperti lokasi usaha, Kapasitas produksi, bahan baku, proses produksi, sanitasi dan limbah, peralatan produksi, tata letak fasilitas, dan struktur organisasi. Analisis kelayakan finansial dilakukan dengan menganalisis beberapa kriteria yaitu perhitungan Harga pokok produksi (HPP), Break Event Point (BEP), R/C Ratio, Net Present Value (NPV), Internal Rate of Return (IRR), dan Payback Period (PP). Analisis teknis pada produksi sirup buah mangrove Somano dinyatakan layak dari segala aspek seperti lokasi yang strategis, kegiatan produksi yang efisien, penggunaan peralatan produksi yang sesuai,sanitasi dan penanganan limbah yang sesuai, dan tata letak fasilitas dan struktur organisasi yang memenuhi syarat. Analisis finansial juga dinyatakan layak dilihat dari nilai HPP sebesar Rp 13.585 per produk dengan markup 120%, nilai BEP 564 unit dengan pencapaian Rp 27.088.129, R/C Ratio 2,2 > 1 yang berarti usaha telah efisien, nilai NPV sebesar Rp 391.785.515, nilai IRR sebesar 180% dan hasil payback period yaitu 451 hari setara dengan 1 tahun 86 hari yang berarti waktu pengembalian sudah sangat ekonomis. Maka hasil dari dua aspek kelayakan teknis dan finansial memberi pengaruh positif bagi peningkatan daya saing usaha. Hasil dari penelitian menunjukkan bahwa Unit Usaha Somano Surabaya layak untuk dijalankan. Pengembangan Unit usaha Somano Surabaya dapat dilakukan dengan peningkatan seluruh aspek pada usaha. Saran yang diberikan bagi unit usaha Somano yaitu perlu dilakukan studi kelayakan pada aspek lainnya untuk lebih meningkatkan daya saing usaha.
English Abstract
The growth of food processing in Indonesia has increased every year. This increase requires business actors to be more creative and highlight the uniqueness/advantages of their respective products. The Somano Surabaya business unit is one of the businesses that uses mangrove plants as a raw material which is then processed into food products in the form of mangrove fruit syrup. Product sales from Somano business unit are still fluctuating, Somano business unit markets the majority of its products to tourists at the Wonorejo Mangrove Tour, Surabaya. Analysis on the technical and financial aspects was carried out to find out whether the production of Somano mangrove fruit syrup is feasible for the long term or not. A technical feasibility analysis is carried out to assess the feasibility of various factors such as location, production capacity, raw materials, production processes, sanitation and waste, machinery and equipment, facility layout, and organizational structure. Financial feasibility analysis is carried out by analyzing several criteria, namely the calculation of the cost of production (HPP), Break Event Point (BEP), R/C Ratio, Net Present Value (NPV), Internal Rate of Return (IRR), and Payback Period (PP). Technical analysis on the production of Somano's mangrove fruit syrup was declared feasible from all aspects such as strategic location, efficient production activities, use of appropriate machinery and equipment, appropriate sanitation and waste handling, and layout of facilities and organizational structure that met the requirements. Financial analysis was also declared feasible, seen from the HPP value of IDR 12,835 per product with a markup of 120%, the BEP value of 564 units with an achievement of IDR 17,106,708, R/C Ratio 2.34> 1 which means the business is efficient, the NPV value is IDR 27.088.129 , the IRR is 180% and the payback period is 451 days equivalent to 1 year 86 days which means the payback period is very economical. So the results of the two aspects of technical and financial feasibility have a positive influence on increasing business competitiveness. The results of the research show that the Somano Surabaya Business Unit is feasible to run. The development of the Somano Surabaya business unit can be carried out by improving all aspects of the business. The advice given to the Somano business unit is that it is necessary to carry out a feasibility study on other aspects to further enhance business competitiveness.
