Abstract
Budaya minum kopi dalam beberapa dekade terakhir tumbuh amat pesat, termasuk pula di Indonesia. Dunia kopi saat ini sedang berada pada gelombang ketiga (Third Wave Coffee Culture) yang ditandai dengan gerakan bahwa kopi seharusnya diapresiasi layaknya seni serta para penikmatnya yang ingin lebih mengenal lebih jauh mengenai karakteristik dari biji kopi itu sendiri. Dengan menjamurnya kedai kopi di Kota Malang, menjadikan budaya ngopi menjadi semakin kuat, khususnya pada kedai kopi Amstirdam Coffee & Roastery. Penelitian ini mengkaji sekaligus menggambarkan bagaimana Amstirdam Coffee membangun budaya ngopi Third Wave Coffee Culture serta mengikat para peminatnya menjadi sebuah komunitas. Penelitian ini menggunakan pendekatan penelitian deskriptif kualitatif dengan metode etnografi. Hasil penelitian menunjukkan bahwa budaya ngopi Third Wave Coffee Culture yang dibangun oleh Amstirdam Coffee & Roastery sangatlah kuat sehingga menciptakan komunitas di dalamnya. Komunitas yang dimaksud adalah para penikmat kopi Third Wave Coffee Culture di Amstirdam Coffee yang merupakan anak muda yang berasal dari kelas sosial tertentu, yaitu kelas menengah sosial berpendidikan yang berasal dari kalangan mahasiswa dan pekerja. Di sisi lain, Amstirdam Coffee juga memfasilitasi penikmat kopi Third Wave Coffee Culture untuk menggali pengetahuan mengenai kopi dengan adanya Kelas Kopi dan konsep Open Bar.
English Abstract
The coffee culture in the last few decades has grown very rapidly, including in Indonesia. Coffee culture is currently in its third wave (Third Wave Coffee Culture), identified by the movement that coffee should be appreciated like an art and people’s connoisseurs want to know more about the characteristics of the coffee beans. With the growth of coffee shops in Malang City, the coffee culture is getting stronger, especially at the Amstirdam Coffee & Roastery. This research examines as well as describes how Amstirdam Coffee builds the Third Wave Coffee Culture and binds its enthusiasts into a community. This study used descriptive qualitative research with ethnographic methods. The results of the research show that Third Wave Coffee Culture which was built by Amstirdam Coffee & Roastery is so strong that it creates a community within it. The community refers to Third Wave Coffee Culture coffee connoisseurs at Amstirdam Coffee, which are young adult who come from a certain social class, namely the educated social middle class, there are college students and workers. On the other hand, Amstirdam Coffee also facilitates Third Wave Coffee Culture coffee connoisseurs to explore coffee knowledge with Kelas Kopi and the Open Bar concept.
