Abstract
Kitosan merupakan senyawa dengan rumus kimia poli (2-amino-2-dioksi-β-D-glukosa) yang dapat dihasilkan dengan proses hidrolisis kitin menggunakan basa kuat. Kemampuan kitosan sebagai bahan antibakteri tergantung pada derajat deasetilasi. Pada proses deastilasi kitin menjadi kitosan terdapat 2 metode yaitu secara kimiawi dan biologis (enzimatis), dan memiliki 3 tahapan yaitu deproteinisasi, demineralisasi, dan deasetilasi. Nilai derajat deasetilasi tertinggi diperoleh dengan perlakuan NaOH 65% sebesar 97,33%. Kitosan dapat dimanfaatkan sebagai antibakteri Staphylococcus aureus dengan zona hambat sebesar 20 mm. aktivitas antimikroba kitosan dipengaruhi oleh derajat deasetilasi, berat molekul dan pelarut yang digunakan, suhu dan bahan baku yang digunakan.
English Abstract
Chitosan is a compound with the chemical formula poly (2-amino-2-dioxy-β-D-glucose) which can be produced by hydrolysis of chitin using a strong base. The ability of chitosan as an antibacterial agent depends on the degree of deacetylation. In the process of destillation of chitin into chitosan there are 2 methods, namely chemically and biologically (enzymatically), and has 3 stages, namely deproteinization, demineralization, and deacetylation. The highest degree of deacetylation was obtained with 65% NaOH treatment of 97.33%. Chitosan can be used as an antibacterial Staphylococcus aureus with an inhibition zone of 20 mm. The antimicrobial activity of chitosan is influenced by the degree of deacetylation, molecular weight and solvent used, temperature and raw materials used.
