Abstract
Ubi jalar (Ipomoea batatas L.) merupakan komoditas pangan dengan produktivitas tinggi dan pemanfaatan terbatas. Salah satu pendekatan yang dapat dilakukan untuk meningkatkan nilai gunanya adalah dengan pemanfaatan sebagai prebiotik. Penelitian potensi oligosakarida ubi jalar ungu sebagai prebiotik dapat dilakukan secara in vitro dan in vivo. Penelitian in vitro terkait pemanfaatan ubi jalar sebagai prebiotik telah banyak dilakukan. Penelitian in vitro dapat memberikan hasil yang cepat dan kondisi yang terkontrol, namun memiliki keterbatasan dalam merepresentasikan kondisi fisiologis dan fisikokimia saluran pencernaan. Oleh karenanya, penelitian in vivo dilakukan untuk mengetahui potensi suatu bahan sebagai prebiotik potensial setelah melalui saluran pencernaan. Oligosakarida Ubi jalar ungu diberikan kepada hewan coba tikus wistar selama periode perlakuan. Analisis dilakukan untuk memenuhi parameter prebiotik potensial. Pemberian oligosakarida ubi jalar ungu dapat meningkatan berat badan selama masa perlakuan, menurunkan jumlah total mikroba dan meningkatkan jumlah Bakteri Asam Laktat (BAL).
English Abstract
Sweet potato (Ipomoea batatas L.) is a food commodity with high productivity and limited utilization.Utilizing it as a prebiotic is one method to expand its applicability. As well as in vitro and in vivo studies can be conducted to determine the potential of purple sweet potato oligosaccharides as prebiotics. There have been a variety of in vitro research conducted on the utilization of sweet potatoes as prebiotics. In vitro studies have limits in accurately simulating the physiological and physicochemical characteristics of the digestive tract, although they would offer quick results under controlled circumstances. In order to determine whether a substance could function as a potential prebiotic after passing through the digestive system, in vivo research was carried out. Wistar rats used as research subjects received purple sweet potato oligosaccharides during the treatment plan. To fulfill potential prebiotic parameters, analysis was performed. During the course of treatment, the administration of purple sweet potato oligosaccharides could lead to increases in body weight, a decrease in the overall number of microorganisms, and an increase in Lactic Acid Bacteria (LAB).
