Abstract

Kabupaten Pacitan merupakan salah satu daerah dengan potensi dan produksi perikanan tangkap yang tinggi. Salah satunya adalah industri rumah tangga pengolahan tuna. Pemenuhan kebutuhan ikan tuna bagi konsumen tidak terlepas dari sistem manajemen rantai pasok. Dalam aktivitasnya, manajemen rantai pasokan melibatkan banyak pihak yang saling tersinergi dan berkoordinasi satu sama lain. Berdasarkan kondisi tersebut maka penting untuk melakukan analisis kinerja manajemen rantai pasok dengan pendekatan supply chain operation reference (SCOR) meliputi plan, source, make, deliver, dan return. Tujuan penelitian dalam skripsi ini adalah sebagai berikut adalah menganalisis kinerja rantai pasokan Industri Pengolahan Ikan Tuna Skala Rumah Tangga dan memberikan rekomendasi untuk meningkatkan kinerja manajemen rantai pasokan Industri Pengolahan Ikan Tuna Skala Rumah Tangga di Kabupaten Pacitan, Jawa Timur. Jenis penelitian yang dilakukan adalah penelitian deskriptif dengan metode sampling yang digunakan adalah purposive sampling. Industri rumah tangga pengolahan tuna yang dijadikan tempat penelitian antara lain Tahu Tuna Dewa Ruci, Alsafood, Tahu Tuna Aziza, Sabrina Frozen Food, Hikmah Frozen Food, dan Rahayu Food. Metode analisis data menggunakan model SCOR dengan pembobotan menggunakan Analytical Hierarchy Process (AHP). Hasil penenelitian ini menunjukan nilai performance 87,58 atau dalam kisaran 70 – 90 maka indikator kerja yang didapatkan adalah good (baik). Kondisi ini menggambarkan bahwa kinerja manajemen rantai pasok industri rumah tangga pengolahan tuna di Kabupaten Pacitan sudah dalam kondisi baik. Nilai kinerja tertinggi didapatkan pada proses source dengan nilai akhir 29,00. Berdasarkan hasil ini menunjukan bahwa pada proses source ini berjalan dengan sangat optimal dilihat dari proses ketersediaan bahan baku yang melimpah di Kabupaten Pacitan. Pada proses source dengan dimensi reability dari semua industri menunjukan kondisi yang baik. Pada KPI kecacatan bahan baku yang dikirim dari pengepul kepada pihak industri tidak terdapat kecacatan. Berdasarkan hasil perhitungan bobot, proses terendah adalah plan dan deliver. Rekomendasi yang diberikan berdasarkan permasalahan tersebut adalah diperlukanya produk baru untuk menambah variasi pengolahan tuna yang ada di Kabupaten Pacitan. Pada proses ini memerlukan bantuan dari pemerintah dan dinas terkait untuk memberikan ide serta pelatihan pembuatan produk.

English Abstract

Pacitan Regency is one of the areas with the high potential and production of fisheries. Considering the high income of the Pacitan community, especially the coastal community, it comes from the industry of fishery products. One of them is the home industry of tuna fish processing. The fulfillment of tuna fish for consumers cannot be separated from the supply chain management system. In its activities, supply chain management involves many parties who synergize and coordinate each other. The research objectives in this thesis are as follows: to analyze the supply chain performance of the household-scale tuna processing industry and provide recommendations to improve the supply chain management performance of the household-scale tuna processing industry in Pacitan Regency, East Java. This type of the research is descriptive research with the sampling method used is purposive sampling. Tuna fish processing home industries used as research locations include Dewa Ruci Tofu, Alsafood, Aziza Tuna Tofu, Sabrina Frozen Food, Wisdom Frozen Food, and Rahayu Food. The data analysis method used the SCOR model with the weighting using the Analytical Hierarchy Process (AHP). The results of this research indicate a performance value of 87.58 or in the range of 70 - 90, the work indicator obtained is Goog (good). This condition illustrates that the supply chain management performance of the tuna fish processing home industry in Pacitan Regency is in good condition. The highest performance value is obtained in the source process with a final value of 29.00. Based on these results, it shows that the sourcing process is running very optimally, as can be seen from the abundant availability of raw materials in Pacitan Regency. The sourcing process with reliability dimensions from all industries shows good condition. In the KPI for defects in raw materials sent from collectors to the industry shows that there are no defects. Based on the results of the weight calculation, the lowest process is plan and deliver. The recommendations given based on these problems when discussing with industry owners is about the need for new products to increase the variety of tuna fish processing in Pacitan Regency.
