Abstract

Buah kurma (Phoenix dactylifera L.) salah satunya varietas Barhi adalah pangan bernutrisi tinggi yang diekspor pada tingkat kematangan Khalal dan Tamr dengan kandungan air mencapai 45-65% yang menyebabkan kurma mudah rusak. Upaya mengatasi permasalahan ini dengan mengolah buah kurma menjadi keripik menggunakan metode penggorengan vakum. Penelitian ini bertujuan untuk mengetahui pengaruh tingkat kematangan buah dan kombinasi perlakuan suhu dan waktu penggorengan berbeda terhadap karakteristik fisikokimia keripik kurma serta mengetahui perlakuan suhu dan waktu penggorengan yang menghasilkan keripik kurma terbaik.

English Abstract

Date palm fruit (Phoenix dactylifera L.), one of the varieties of Barhi, is a highly nutritious food which is exported at a Khalal and Tamr maturity level with a water content reaching 45-65% which causes dates to be easily damaged. Processing the dates into chips using a vacuum frying method is one of the efforts to overcome the problem. This study aims to determine the effect of fruit maturity level and the combination of different temperature and frying time treatment on the physicochemical characteristics of date palm chips and determine the temperature treatment and frying time that produces the best date palm chips.
