Mustofa Lutfi, MP RINGKASAN Cabai merah (Capsicum annuum L.) merupakan tanaman hortikultura yang mendapat perhatian penting dan memiliki potensi untuk dikembangkan. Kadar air yang tinggi pada cabai meah yaitu sekitar 55-85% serta cepat mengalami kerusakan yang disebabkan oleh bakteri, jamur dan kerja enzim yang menyebabkan cabai menyusut dan keriput sehingga cabai sulit dipertahankan dalam kondisi segar (Marliah et al., 2011).
English Abstract
Red chili (Capsicum annuum L.) is a horticultural crop that receives important attention and has the potential to be developed. High water content in the meah chili which is around 55-85% and is quickly damaged by bacteria, fungi and enzymes that cause the chili to shrink and wrinkle so that the chili is difficult to maintain in fresh conditions (Marliah et al., 2011).
