Abstract
Permintaan terhadap kopi berkualitas terbaik sangat tinggi terutama arabika specialty coffee, sehingga untuk membuat specialty coffee dibutuhkan perlakuan terbaik pada setiap proses pengolahan biji kopi, terutama proses roasting. Roasting adalah proses pemanasan dengan suhu tinggi untuk membentuk cita rasa dan aroma pada biji kopi dengan menggunakan mesin secara tertutup. Faktor yang menjadi pengaruh tolak ukur pada roasting salah satunya densitas. Densitas menjadi acuan seorang roaster untuk menentukan suhu dan waktu yang digunakan saat roasting. Sehingga tujuan dari penelitian yaitu mengetahui hasil perbandingan densitas biji kopi pada proses roasting berstandar specialty coffee menggunakan mesin “Hottop KN-8828D” dan mengetahui karakteristik fisik produk kopi yang dihasilkan.
English Abstract
Demand for the best quality coffee is very high, particularly arabica specialty coffee. In order make specialty coffee, it requires the best treatment in each process of processing coffee beans, especially the roasting process. Roasting is a process of heating with high temperatures to form the taste and aroma of coffee beans using a closed machine. One of the factors that influence the measurement of roasting is density. Density is a reference for a roaster to determine the temperature and time used in the roasting process. The purpose of this research is to compare differences density of coffee beans in the specialty coffee roasting process using the "Hottop KN-8828D" machine and to know the physical characteristics of the coffee produced.
