Abstract

Nira kelapa merupakan komoditi yang sering digunakan untuk membuat gula melalui proses pemanasan hingga tercapai kadar air yang diinginkan. Pada penelitian ini dilakukan pembuatan gula cair dari nira kelapa menggunakan Evaporator Double Effect Termodifikasi. Tujuan dari penelitian ini adalah untuk mengetahui pengaruh suhu dan lama proses evaporasi terhadap kesetimbangan massa, kadar brix dan kadar air produk yang dihasilkan. Kesetimbangan massa berguna untuk mengetahui massa input dan output serta mengetahui kehilangan massa selama proses evaporasi. Setiap bahan yang akan atau telah dievaporasi diukur kadar brix dan kadar airnya. Penelitian ini menggunakan perlakuan suhu sebesar 70 oC dan 80 oC dan waktu selama 120 menit, 130 menit, dan 140 menit. Perlakuan terbaik didapatkan pada suhu 70 oC selama 140 menit yaitu 65,5 obrix dengan kadar air 29,37% dan suhu 80 oC selama 130 menit yaitu 72 obrix dengan kadar air 16,94%.

English Abstract

Coconut juice is a commodity that is often use to make sugar through a heating process until the desired moisture content is reached. In this research, liquid sugar was made from coconut juice using a Modified Double Effect Evaporator. The purpose of this study was to determine the effect of temperature and duration of the evaporation process on mass balance, brix content and water content of the resulting prduct. Mass balance is useful for knowing the input and output mass as well as knowing the losses during the evaporation process. Each material that will be or has been evaporated is measured for its brix content and water content. This study used a temperature 70 oC and 80 oC and a time of 120 minutes, 130 minutes, and 140 minutes. The best treatment was obtain at temperature 70 oC for 140 minutes with a result of 65,5 obrix and a water content of 29,37% and at temperature 80 oC for 130 minutes with a result of 72 obrix and a water content of 16,94%.
