Abstract
Pada industri perikanan salah satu tingkat risiko paling tinggi adalah risiko cacat hasil produksi. Menurut kkp.go.id, per Desember 2020 terdapat 97 penolakan produk ekspor perikanan dari Indonesia. Hal ini dikarenakan kegagalan produksi yang menyebabkan produk ekspor perikanan tidak sesuai standar negara tujuan. PT Dempo Andalas Samudera adalah salah satu industri perikanan yang melakukan kegiatan ekspor yang besar, dengan begitu perusahaan harus menetapkan standar produksi yang tinggi dalam proses produksi agar tidak terjadi produksi yang cacat. Risiko cacat produk dapat berdampak negatif bagi perusahaan karena dapat mengakibatkan menurunnya citra perusahaan dan kepercayaan konsumen. Berdasarkan uraian diatas, kajian dan analisis risiko pada PT. Dempo Andalas Samudera penting untuk dilakukan. Jenis penelitian ini adalah penelitian studi kasus, dengan menggunakan data primer dan sekunder, data primer diperoleh dengan metode wawancara sedangkan data sekunder diperoleh dari studi literatur, buku dan internet. Penentuan responden data menggunakan teknik non-probability sampling dengan teknik pengambilan sampel bersyarat (purposive sampling). Dengan responden yang berjumlan tiga orang. Analisis data menggunakan metode House of Risk dan Diagram Pareto. Hasil Penelitian terdapat 13 kejadian risiko dalam proses produksi pada PT. Dempo Andalas Samudera, ditemukan 4 yang berasal dari faktor raw material, 4 dari faktor mesin/peralatan, dan 5 dari faktor manusia. Terdapat 9 Agen risiko dalam proses produksi pada PT. Dempo Andalas Samudera. Agen risiko yang di prioritaskan untuk dilakukan tindakan pencegahan yaitu; yaitu Kontaminasi Silang (A6) dan Kerusakan pada sistem mesin (A2). Aksi mitigasi yang direkomendasikan adalah; (1) Melakukan Training tentang Personal Hygiene pada Karyawan (2) Membuat SOP Kebersihan kontak dengan pangan (3) Memberikan Sanksi pada karyawan yang melanggar SOP (4) Melakukan Maintanance dan Cek berkala pada Mesin (5) Membuat SOP penggunaan Peralatan. Dari 5 tindakan pencegahan tersebut didapatkan 2 tindakan pencegahan yang paling efektif dan paling mudah untuk dilakukan untuk mencegah agen risiko prioritas yaitu; (1) Melakukan Training tentang Personal Hygiene pada Karyawan dan (2) Melakukan Maintanance dan Cek berkala pada Mesin.
English Abstract
In the fishing industry, one of the highest levels of risk is the risk of production defects. According to kkp.go.id, as of December 2020 there were 97 rejections of fishery export products from Indonesia. This is due to production failures that cause fishery export products not to meet the standards of the destination country. PT Dempo Andalas Samudera is one of the fishing industries that carries out large export activities, thus the company must set high production standards in the production process so that defective production does not occur. The risk of product defects can have a negative impact on the company because it can lead to a decline in the company's image and consumer confidence. Based on the description above, the study and risk analysis at PT. Dempo Andalas Samudera is important to do. The type of this research is case study research, using primary and secondary data, primary data obtained by interview method while secondary data obtained from literature studies, books and the internet. Determination of data respondents using a nonprobability sampling technique with a conditional sampling technique (purposive sampling). With three respondents. Data analysis used the House of Risk method and Pareto diagram. The results of the study there were 13 risk events in the production process at PT. Dempo Andalas Samudera, found 4 originating from raw material factors, 4 from machinery/equipment factors, and 5 from human factors. There are 9 risk agents in the production process at PT. Dempo Andalas Samudera, namely Natural Diseases of Fish (Histamine), Damage to the engine system, Factory Sabotage, Low Quality of Raw Materials from Suppliers, Uncertain Ship Schedules, Cross Contamination, Inaccuracy During the Sorting Process, Packaging Errors, Errors in product storage treatment. Risk agents that are prioritized for preventive action are; namely Cross Contamination (A6) and Damage to the engine system (A2). The recommended mitigation actions are; (1) Conducting Training on Personal Hygiene for Employees (2) Making SOPs for hygiene in contact with food (3) Providing sanctions to employees who violate the SOPs (4) Performing maintenance and periodic checks on machines (5) Making SOPs for the use of equipment. Of the 5 preventive actions, 2 of the most effective and easiest preventive actions to take to prevent priority risk agents were obtained, namely; (1)Conducting Training on Personal Hygiene for Employees and (2) Performing Maintenance and Periodic Checks on Machines.
