Abstract

Modified Vacuum Technology merupakan suatu alat yang digunakan untuk mengolah produk yang berbahan cair termasuk susu dengan menggunakan metode Automatic Evaporated Milk Technology. Prinsip utama cara kerja alat ini adalah mengatur keseimbangan suhu dan tekanan vakum. Alat ini mampu menghisap kadar air dalam bahan dengan kecepatan tinggi sehingga kadar air dalam susu dapat diserap dengan sempurna. Untuk mendapatkan produk dengan kualitas yang bagus pengaturan suhu tidak boleh melebihi 60 oC dan tekanan vacuum antara 65-76 cmHg. Penelitian ini bertujuan untuk menganalisa pengaruh suhu terhadap umur simpan susu yang diolah dengan MVT berdasarkan parameter pH, Viskositas dan juga Warna. Variabel yang digunakan pada penelitian adalah suhu sebesar 50 oC, 55 oC dan 60 oC dengan waktu 15 menit, 25 menit dan 35 menit. Uji kualitas susu meliputi pH, Viskositas dan Warna. Metode yang digunakan adalah ESS (Extended Storage Studies). Hasil penelitian menunjukkan bahwa proses evaporasi susu sapi menggunakan Modified Vacuum Technology dengan Evaporator Double Jacket, diketahui memiliki pengaruh nyata terhadap pH, Viscositas dan Warna. Selain itu suhu juga memiliki pengaruh terhadap data yang dihasilkan. Berdasarkan data yang diperoleh untuk pH, Viskositas dan juga warna sesuai dengan syarat mutu Standar Nasional Indonesia (SNI) 3141.1-2011. Penggunaan Modified Vacuum Technology dengan Evaporator Double Jacket mampu memperpanjang umur simpan dari susu segar. Umur simpan yang di evaporasi dengan Modified Vacuum Technology dapat mencapai umur simpan sekitar 2 hari pada suhu ruang. Pendugaan umur simpan tersebut didasarkan pada tidak adanya perubahan warna

English Abstract

Modified Vacuum Technology is a tool used to process products made from liquids including milk using the method of Automatic Evaporated Milk Technology. The main principle of how this tool works is to regulate the balance of temperature and vacuum pressure. This tool can suck the water content in the ingredients at a high speed so that the water content in the milk can be absorbed perfectly. To get a good quality product, the temperature setting should not exceed 60 oC and the vacuum pressure should be between 65-76 cmHg. This study aims to analyze the effect of temperature on the shelf life of milk treated with MVT based on the parameters of pH, Viscosity and Color. The variables used in this study were temperatures of 50oC, 55 oC and 60 oC with a time of 15 minutes, 25 minutes and 35 minutes. Milk quality tests include pH, Viscosity and Color. The method used is ESS (Extended Storage Studies). The results showed that the evaporation process of cow’s milk using Modified Vacuum Technology with Double Jacket Evaporator, is known to have a significant effect on pH, viscosity and color. In addition, temperature also influences the resulting data. Based on the data obtained for pH, viscosity and also color following with the quality requirements of the Indonesia National Standart (SNI) 3141.1-2011. The use of Modified Vacuum Technology with a Double Jacket Evaporator can extend the shelf life of fresh milk. Shelf life that is evaporated with Modified Vacuum Technology can reach a shelf life of about 2 days at room temperature. Estimation of the shelf is based on the absence of color change
