Abstract

Penelitian ini membahas tentang upaya perbaikan proses bisnis pada sebuah café yang mengalami permasalahan kualitas layanan dan sistem kerja yang belum teratur. Penelitian ini mengambil objek Cafe Terminal Mie di Kota Malang. Permasalahan dicafe Terminal Mie terjadi karena banyak komplain dari pelanggan dan karyawan terhadap produk dan jasa yang ditawarkan. Penelitian ini bertujuan memperbaiki kinerja layanan dan proses bisnis menggunakan business process reengineering sebagai motode analisis karena memiliki ruang lingkup yang luas dan memungkinkan untuk membangun sistem kerja yang baku. Hasil penelitian menemukan bahwa proses bisnis yang dijalankan selama ini masih konvensional dan tidak terkelola dengan baik. Usulan perbaikan yang direkomendasikan penelitian ini adalah dengan menghitung kebutuhan tenaga kerja menggunakan work force analysis, membuat job description, standart operating procedure, key performance indicator serta bisnis proses baru yang digambarkan dalam flowchart

English Abstract

This research discusses efforts to improve business processes in a cafe that is experiencing service quality problems and an irregular work system. This research took the object of the Terminal Mie Cafe in Malang City. The problem occures There are many complaint from customers and employees about the product and services offered. This research aims to improve the performance of services and business processes using business process reengineering as an analytical method because it has a broad scope and allows to build a standard work system. The results of the study found that the business processes that have been carried out so far are still conventional and not well managed. The proposed improvement recommended by this research is to calculate the workforce needs using workforce analysis, create job descriptions, standard operating procedures, key performance indicators, and new business processes described in the flowchart
