Abstract
Santan merupakan produk yang sangat mudah rusak karena kandungan air, lemak dan protein yang cukup tinggi sehingga mudah ditumbuhi oleh mikroorganisme pembusuk ditandai dengan bau tengik dan terpisahnya emulsi. Sonikasi merupakan teknologi yang memanfaatkan gelombang ultrasonik dengan frekuensi >20 kHz yang jika deterapkan pada bahan cair dapat menghasilkan efek kavitasi atau terbentuknya gelembung hampa udara yang dapat menigkatkan stabilitas emulsi. Iradiasi ultraviolet merupakan proses pemaparan sinar ultraviolet pada produk, efek pemaparan sinar dengan ultraviolet dapat menginaktivasi mikroorganisme. Rancang bangun alat preservasi non-thermal pada santan merupakan inovasi dalam proses pengawetan santan. Dari hasil realisasi perancangan diketahui alat preservasi santan memiliki dimensi total 54 cm x 40 cm x 45 cm dengan kapitas 2 L daya 159.20 watt, dan frekuensi 40 KHz serta menggunakan sistem kontrol suhu dan waktu. Efisiensi energi alat mencapai 72 %, efisiensi energi proses iradiasi sinar UV sebesar 57%, efisiensi energi proses sonikasi 55.94 % dengan akurasi kontrol suhu 0.41 ℃ dengan biaya energi per proses sebesar 117.73 rupiah.
English Abstract
Coconut milk is a product that’s perishable caused by its water content, fat and protein are high which easily overgrown by decomposing microorganisms characterized by a rancid odor and separation of the emulsion. Sonication is a technology that utilizes ultrasonic waves with a frequency of> 20 kHz, if it applied to liquid material can produce cavitation effects or the formation of vacuum bubbles that can increase the stability of the emulsion. Ultraviolet irradiation is the process of exposure ultraviolet light on products, the effect of ultraviolet light is inactivate microorganisms. The design of non-thermal preservation tools in coconut milk is an innovation in the process of preserving coconut milk. From the results of the realization of the design it is known coconut conservation tools have a total dimension of 54 cm x 40 cm x 45 cm with a capacity of 2 L, power of 159.20 watt, and a frequency of 40 KHz with temperature and time control. Energy efficiency of the tool reached 72%, energy efficiency of UV irradiation process by 57%, sonication process energy efficiency is 55.94 % with temperature control accuracy of 0.41℃ and the cost of energy per process is 117. 73 rupiah.
