Abstract
Nitrit dalam bentuk natrium nitrit merupakan pengawet yang umum digunakan pada produk olahan daging sosis. Kebanyakan produsen sosis hanya memberikan keterangan pada label perihal natrium nitrit dipakai menjadi pengawet tetapi tak memberikan keterangan jumlah yang digunakan. Batas maksimal untuk pemakaian tambahan bahan pangan pengawet nitrit bedasarkan BPOM RI No.36. pada tahun 2013 mengenai produk olahan daging adalah sebesar 30 mg/kg. Tujuan penelitian ini untuk mengetahui jumlah natrium nitrit yang terdapat pada sosis yang beredar dikota Malang. Sosis yang digunakan pada penelitian ini yaitu merek A, B, C, D, E, dan F. Penelitian ini dilakukan secara kualitatif dengan parameter uji fenomena visual dan uji reaksi warna, sedangkan kuantitatif dilakukan dengan bantuan alat spektrofotometer UV-Vis dengan parameter analisa penentuan panjang gelombang maksimum, operation time, validasi metode analisis yang terdiri dari uji linieritas, uji lod loq, uji ketelitian (precision), uji ketepatan (accuracy) dan pencarian kadar natrium nitrit. x Pada penelitian uji rekasi warna didapatkan hasil untuk semua sampel sosis positif mengandung natrium nitrit kecuali sampel sosis merek F negatif tidak mengandung natrium nitrit. Pada uji fenomena visual sosis selama 7 hari terjadi perubahan yang meliputi warna sosis menjadi lebih gelap, tekstur keras ,berair, berjamur dan aromanya asam. Pada penentuan panjang gelombang maksimum didapatkan hasil 548 nm, operation time pada menit ke 15, uji linieritas didapatkan hasil sebesar y: 0,271x + 0,0053 dengan R2 0,9976, uji lod sebesar 0,00122, uji loq sebesar 0,0041, uji ketelitian (precision) dengan nilai KV sebesar 1,065%,uji ketepatan (accuracy) dengan nilai %recovery sebesar 99,334% dan pada pencarian kadar natrium nitrit sampel sosis merek A, B, C, D dan E didapatkan hasil nilai rata – rata sebesar 181,85 mg/kg, 304,11 mg/kg, 276,37 mg/kg, 245,61 mg/kg, dan 188,69 mg/kg.
English Abstract
Nitrite in the form of sodium nitrite is a preservative commonly used in sausage meat products. Most sausage manufacturers only provide information on the label about sodium nitrite being used as a preservative but do not provide a description of the amount used. The maximum limit for the use of additional nitrite preservative food ingredients is based on BPOM RI No.36. in 2013 regarding processed meat products amounted to 30 mg / kg. The purpose of this study was to determine the amount of sodium nitrite found in sausages circulating in the city of Malang. The sausages used in this study were A, B, C, D, E and F brands. This research was conducted qualitatively with visual phenomenon test parameters and color reaction tests, while quantitative was carried out with the help of a UV-Vis spectrophotometer with the analysis parameters of determining the maximum wavelength, operation time, validation of the analytical method consisting of linearity test, lod loq test, test precision, test accuracy and search for levels of sodium nitrite. In this research, the color reaction test showed that all positive sausage samples contained sodium nitrite, except for the xii negative sample of F brand sausages which did not contain sodium nitrite. In the sausage visual phenomenon test for 7 days there was a change which included darker color of the sausage, hard texture, watery, moldy and sour aroma. In determining the maximum wavelength, the results were 548 nm, operation time was 15 minutes, the linearity test obtained results of y: 0.271x + 0.0053 with R2 0.9976, lod test was 0.00122, loq test was 0.0041, the precision test with an KV value of 1.065%, the accuracy test with a% recovery value of 99.334% and the search for sodium nitrite levels for samples of sausage, A, B, C, D, dan E sausages obtained an average value of 181 , 85 mg / kg, 304.11 mg / kg, 276.37 mg / kg, 245.61 mg / kg, and 188.69 mg / kg.
