Abstract
Kimpul (Xanthosoma sagittifolium (L.) Schott) dapat dijadikan sebagai alternatif bahan pangan untuk memenuhi kebutuhan gizi masyarakat Indonesia. Kimpul memiliki kandungan karbohidrat dan kadar pati yang tinggi, serta kadar gula yang rendah yaitu sebesar 31,11%, 28%, dan 0,44% dibandingkan dengan umbi lainnya. Keterbatasan teknologi pengolahan kimpul menyebabkan rendahnya pemanfaatan kimpul sebagai bahan pangan. Salah satu upaya pemanfaatan kimpul yaitu dengan produk olahan berupa tepung kimpul. Proses pengolahan menjadi tepung kimpul membutuhkan mesin penyawut untuk mereduksi ukuran kimpul sehingga dapat memaksimalkan proses pengeringan bahan serta proses penepungan. Pada penelitian ini mesin penyawut serbaguna DM-TEP menggunakan tenaga penggerak berupa motor listrik 0,5 HP/1400 rpm serta memiliki 4 unit pisau penyawut. Proses pengujian menggunakan dimmer untuk perlakuan kecepatan putar pisau yaitu Low (438,57 rpm), Medium (447,10 rpm), High viii (453,80 rpm), dan Full (459,93 rpm) dengan 3 kali pengulangan. Berdasarkan pengukuran hasil uji kinerja, mesin penyawut serbaguna DM-TEP memiliki kapasitas penyawutan sebesar 51,532 Kg/Jam, nilai torsi terendah didapatkan pada perlakuan Low sebesar 2,512 N.m sedangkan nilai torsi tertinggi didapatkan pada perlakuan Full 4,659 N.m, energi spesifik terendah didapat pada perlakuan Low sebesar 9,799 KJ/Kg sedangkan energi spesifik tertinggi didapat pada perlakuan Full sebesar 13,420 KJ/Kg, dan efisiensi penyawutan terendah didapat pada perlakuan Full sebesar 89,80% sedangkan energi spesifik tertinggi didapat pada perlakuan High sebesar 90,87%. Proses pengujian hasil penyawutan didapatkan panjang ratarata sebesar 49,60 mm, lebar rata-rata sebesar 3,87 mm, dan tebal rata-rata sebesar 3,87 mm, serta persentase kerusakan hasil penyawutan yaitu sebesar 8,133 %. Faktor yang dapat mempengaruhi proses pengujian mesin penyawut serbaguna DM-TEP diantaranya adalah karakteristik bahan, tenaga operator yang diberikan pada proses input bahan, serta human error yang dapat terjadi.
English Abstract
Blue Taro (Xanthosoma sagittifolium (L.) Schott) can be used as an alternative food ingredient to meet the nutritional needs of the Indonesian people. Blue taro has high carbohydrate and starch content, as well as low sugar content of 31.11%, 28%, and 0.44% compared to other tubers. The limitation of blue taro processing technology causes the low utilization of blue taro as a food ingredient. One of the efforts to use blue taro for processed products such as blue taro starch. The processing blue taro into blue taro flour requires a cutting machine to reduce the size of the tube so that it can maximize the drying process and the starch making process. In this research, the DM-TEP multipurpose cutting machine used an AC electric motor 0.5 HP/1400 rpm and has 4 units of cutting blades. The testing process uses a dimmer for the treatment of blade rotational speed, namely Low (438.57 rpm), Medium (447.10 rpm), High (453.80 rpm), and Full (459.93 rpm) with 3 repetitions. Based on the measurement of the results of the x performance test, the DM-TEP multipurpose cutting machine has a weaving capacity of 51.532 Kg/hour, the lowest torque value is obtained in the Low treatment of 2.512 Nm while the highest torque value is obtained in the Full treatment of 4.659 Nm, the lowest specific energy is obtained in the Low treatment of 9,799 KJ/Kg while the highest specific energy was obtained in the Full treatment of 13,420 KJ/Kg, and the lowest cutting efficiency was obtained in the Full treatment of 89.80% while the highest specific energy was obtained in the High treatment of 90.87%. The result of cutting blue taro with DM-TEP cutting machine obtained an average length of 49.60 mm, an average width of 3.87 mm, and an average thickness of 3.87 mm, and the percentage of damage to the results of cutting is 8.133%. Factors that can affect the cutting process for the DM-TEP multipurpose cutting machine include the characteristics of the material, the operator power given to the material input process, and human errors that can occur.
