Abstract
Salah satu protein penting yang terdapat pada plasma darah manusia adalah albumin. Rendahnya konsentrasi albumin dalam tubuh atau hypoalbuminemia mengindikasikan terjadinya malnutrisi, penyakit hati kronis (sirosis), malabsorbsi, luka bakar hebat, serta kondisi pasca operasi. Salah satu ikan air tawar dengan kandungan albumin tinggi ialah ikan gabus. Banyak pelaku industri albumin ikan gabus terutama industri rumahan dan tradisional yang kurang memerhatikan ketepatan suhu dan durasi dalam proses ekstraksi. Pemberian suhu dan waktu pemanasan yang terlalu lama dapat menurunkan nilai kadar albumin. Berdasarkan permasalahan tersebut, pada penelitian ini akan dirancang sistem pengendalian suhu pada alat ekstraksi albumin ikan gabus yang dapat mengukur suhu dengan akurasi yang ditentukan, menjaga suhu pemanasan pada rentang suhu yang diizinkan, serta durasi yang terukur. Penelitian ini membahas mengenai perancangan sistem pengendalian suhu pada alat ekstraksi albumin ikan gabus serta hasil pengujian rancangan untuk mengetahui apakah telah sesuai dengan spesifikasi dan prinsip kerja yang dirancang. Suhu dalam alat ekstraksi akan diukur oleh sensor suhu PT100. Kemudian hasil pembacaan suhu diolah oleh mikrokontroler Arduino Nano untuk mengatur level dimmer dengan menerapkan kendali on-off. Sistem pengendalian suhu dengan kendali on-off diharapkan menghasilkan suhu antara 60-70°C saat ekstraksi dan di bawah 43°C saat pasteurisasi. Dari hasil pengujian proses ekstraksi yang menerapkan setpoint bawah 63°C dan setpoint atas 67°C menghasilkan suhu tertinggi 68,95°C dan terendah 60,99°C. Sedangkan pada proses pasteurisasi dengan setpoint bawah 35°C dan setpoint atas 40°C, suhu tertinggi mencapai 41,18°C dan terendah sebesar 34,58°C. Dari pengujian juga telah dibatasi durasi lamanya proses ekstraksi selama 1500 detik dan pasteurisasi tepat selama 900 detik. English Abstract
One of the important proteins found in human blood plasma is albumin. Low concentrations of albumin in the body or hypoalbuminemia indicate malnutrition, chronic liver disease (cirrhosis), malabsorption, severe burns, and postoperative conditions. One of the freshwater fish with high albumin content is snakehead fish. Many players in the snakehead fish albumin industry, especially home and traditional industries, do not pay attention to the accuracy of temperature and duration in the extraction process. Giving the temperature and heating time too long can reduce the value of albumin levels. Based on these problems, in this study a temperature control system will be designed on the snakehead fish albumin extraction tool that can measure the temperature with the specified accuracy, maintain the heating temperature in the allowable temperature range, and the measured duration. This study discusses the design of a temperature control system on snakehead fish albumin extraction equipment and the results of design testing to determine whether it is in accordance with the specifications and working principles designed. The temperature in the extraction tool will be measured by the PT100 temperature sensor. Then the temperature readings are processed by the Arduino Nano microcontroller to adjust the dimmer level by applying on-off control. The temperature control system with on-off control is expected to produce temperatures between 60-70°C during extraction and below 43°C during pasteurization. From the test results of the extraction process that applies a lower setpoint of 63°C and an upper setpoint of 67°C, the highest temperature is 68.95°C and the lowest is 60.99°C. Meanwhile, in the pasteurization process with a lower setpoint of 35°C and an upper setpoint of 40°C, the highest temperature reached 41.18°C and the lowest was 34.58°C. From the test, the duration of the extraction process has also been limited to 1500 seconds and pasteurization is right at 900 seconds.
