Abstract

Asap cair grade A merupakan cairan hasil kondensasi asap melalui proses pirolisis tempurung kelapa yang dapat dimanfaatkan sebagai pengawet alami makanan. Selama ini industri lokal asap cair dari pengarangan tempurung kelapa di Indonesia belum banyak berkembang. Hal tersebut dibuktikan dengan kurangnya produksi asap cair grade A dibandingkan dengan grade lainnya. Padahal, terdapat permintaan pasar terhadap asap cair grade A. Selain itu, umumnya produksi asap cair dikelola dengan investasi skala kecil dan teknologi konvensional akibat keterbatasan modal dan informasi pasar. Padahal, potensi ketersediaan bahan baku dan peluang pasar dapat dijadikan dasar dalam pendirian unit produksi asap cair. Oleh karena itu, tujuan dari penelitian ini adalah merancang unit produksi asap cair grade A dengan inovasi teknologi produksi asap cair yang lebih efektif dan efisien berbasis teknologi Cyclone Redistillation diperlukan untuk memenuhi kebutuhan pasar. Selain itu, menganalisis kelayakan teknis dan finansial perancangan tersebut sebagai dasar pendirian industri. Perancangan unit produksi asap cair grade A membutuhkan suatu analisis untuk mengetahui kelayakan perancangan dari segi teknis dan finansial. Analisis teknis berupa lokasi proyek berada di Kabupaten Malang dan didirikan dengan luas area tanah 800 m2, kapasitas produksi 23.400L/tahun, bahan baku, proses produksi, mesin dan peralatan, tata letak dan pola aliran, sanitasi, limbah, neraca massa, struktur organisasi, dan ketenagakerjaan. Analisis kelayakan finansial berupa HPP (Rp 132.632,9357); harga jual produk (Rp 186.000), BEP setelah menjual 10.121,30397 unit atau BEP setelah mencapai pendapatan Rp 1.882.562.538; NPV bernilai positif; IRR sebesar 369%. Adapun PBP menurut perhitungan membutuhkan waktuix selama 2,9 tahun dan dikatakan layak karena kurang dari umur proyek. Berdasarkan analisis tersebut, dapat disimpulkan bahwa perancangan unit produksi asap cair grade A dengan Cyclone Redistillation layak untuk dijalankan

English Abstract

Grade A liquid smoke is smoke-condensed liquid through the coconut shell pyrolysis process which can be used as a natural food preservative. So far the local industry of liquid smoke from the coconut shell processing in Indonesia has not developed much. This is evidenced by the lack of grade A liquid smoke production compared with other grades. In fact, there is a market demand for grade A liquid smoke. In addition, generally the production of liquid smoke is managed by small-scale investment and conventional technology due to limited capital and market information. In fact, the potential availability of raw materials and market opportunities can be used as the basis for the establishment of liquid smoke production units. Therefore, the objective of this research was to design a production unit of grade A liquid smoke with more effective and efficient liquid smoke production technology innovation based on Cyclone Redistillation technology is needed to fulfill market needs. In addition, was to analyzes the technical and financial feasibility of the design as the basis for the establishment of the industry. The design of the production unit of grade A liquid smoke required an analysis to determine the design feasibility in terms of technical and financial. Technical analysis in the form of project location is in Malang Regency and was established with an area of 800 m2, production capacity of 23,400L / year, raw materials, production processes, machinery and equipment, flow layout and patterns, sanitation, waste, mass balance, organizational structure, and employment. The result of financial feasibility analysis have HPP (Rp. 132,632,9357); product selling price (Rp. 186,000); BEP after selling 10,121,30397 units or BEP when it reached revenue of Rp 1,882,562,538; NPV is positive, IRR ofxi 369%. PBP, according to calculations, takes 2.9 years and is said to be feasible because it is less than the age of the project. Based on the analysis, it can be concluded that the design of the production unit of grade A liquid smoke with Cyclone Redistillation is feasible to be implemented
