Abstract
Susu merupakan salah satu produk peternakan yang dibutuhkan dalam jumlah banyak oleh masyarakat Indonesia. Kandungan gizi yang lengkap menjadi alasan tingginya kebutuhan dan permintaan masyarakat akan susu. Tingginya kebutuhan dan permintaan susu di Indonesia masih berbanding terbalik dengan rendahnya pemenuhan susu baik secara kuantitas maupun kualitas. Kualitas susu dari peternak sapi perah lokal secara umum juga masih di bawah standar dimana hal tersebut berdampak pada rendahnya harga jual ditingkat koperasi maupun industri pengolahan susu. Metode yang dapat digunakan untuk penelitian risiko diantaranya metode Fault Tree Analysis (FTA), Even Tree Analysis (ETA), dan Fuzzy AHP (Fuzzy Analytical Hierarchy Process). Analytical Hierarchy Process adalah suatu metode pengambilan keputusan dimana terdapat pilihan – pilihan yang terbatas, namun setiap pilihan tersebut memiliki beberapa atribut dan sangat sulit untuk merumuskan beberapa atribut tersebut. Oleh sebab itu, dari pada menggunakan exact number, kita dapat menggunakan frasa seperti “much more important than” untuk menggambarkan pilihan membuat keputusan. Hasil indentifikasi rantai pasok bahan baku KAN Jabung Malang terdiri dari peternak sapi dan KAN. Dalam rantai pasok KAN terdapat 10 kejadian resiko yang disebabkan oleh pihak manufaktur dan 2 resiko yang disebabkan oleh pihak peternak. Berdasarkan penilaian resiko didapatkan 2 prioritas dari masingmasing pihak yang memiliki kontribusi paling besar antara lain ketersedian susu yang rendah dan keterbatasan mesin produksi.
English Abstract
Milk is one of the livestock products that are needed in large quantities by the people of Indonesia. The complete nutritional content is the reason for the high needs and demands of the community for milk. The high demand and demand for milk in Indonesia is inversely proportional to the low fulfillment of milk both in quantity and quality. The level of fulfillment of milk in quantity is still very low as evidenced by the level of domestic production in 2011 of 36,640 tons / year and requires imports of 173,305.30 tons / year. The quality of milk from local dairy farmers in general is also below the standard, which has an impact on the low selling price at the level of cooperatives and the milk processing industry. Methods that can be used for risk research include the Fault Tree Analysis (FTA) method, Even Tree Analysis (ETA), and Fuzzy AHP (Fuzzy Analytical Hierarchy Process). Analytical Hierarchy Process is a decision-making method where there are limited choices, but each choice has several attributes and it is very difficult to formulate some of these attributes. Therefore, instead of using an exact number, we can use phrases such as "much more important than" to describe choices for making decisions. The results of the supply chain identification of raw materials for KAN Jabung Malang consist of cattle farmers and KAN. In the KAN supply chain there are 10 risk events caused by the manufacturing party and 2 risks caused by the breeder.vi Based on the risk assessment, there were 2 priorities from each party which had the biggest contribution, including low availability of milk and the limitations of the production machine.
