Abstract

Padi merupakan tanaman serealia paling penting, dimana lebih dari setengah penduduk dunia menjadikan beras sebagai makanan pokoknya. Salah satu kultivar padi adalah ketan yang dimanfaatkan menjadi beraneka olahan dengan kebutuhan di Indonesia mencapai 150.000 ton per tahun. Tujuan dari penelitian ini adalah 1. Menganalisis sifat fisik gabah ketan putih yang terdiri dari sifat geometrik, sifat gravimetrik, dan sifat friksional pada beberapa variasi kadar air, 2. Menganalisis sifat fisik gabah ketan hitam yang terdiri dari sifat geometrik, sifat gravimetrik, dan sifat friksional pada beberapa variasi kadar air , dan 3. Membandingkan sifat fisik gabah ketan puth dan hitam. Metode yang digunakan dalam penelitian ini adalah eksperimental dengan melakukan pengondisian kadar air gabah dengan penambahan air untuk kemudian diukur sifat fisiknya sesuai variasi kadar air yang ditentukan. Hasil penelitian ini adalah sifat geometrik gabah ketan putih dan hitam meningkat seiring dengan kenaikan kadar air, massa per 1000 biji gabah ketan putih dan hitam meningkat seiring kenaikan kadar air, bulk density gabah ketan putih dan hitam meningkat seiring kenaikan kadar air, true density gabah ketan putih dan hitam naik turun seiring kenaikan kadar air, porositas gabah ketan putih dan hitam menurun seiring kenaikan kadar air, sifat gravimetrik gabah ketan putih dan hitam naik turunvii seiring kenaikan kadar air dengan tingkat kekerasan papan paling besar adalah papan triplek diikuti papan besi, kaca, dan stainless steel. Sifat geometrik gabah ketan putih lebih besar dibandingkan dengan ketan hitam. Sifat gravimetrik gabah ketan putih lebih besar dibandingkan dengan ketan hitam, namun true density relatif sama dan porositas gabah ketan hitam lebih besar dibandingkan ketan putih. Sedangkan, sifat friksional gabah ketan hitam lebih besar dibandingkan gabah ketan putih

English Abstract

Paddy is the most cereal crop, which is more than half population in the world make rice as a staple food. One of cultivar paddy is glutinous rice, which can be used as a variety of processed products, Indonesia needs 150.000 tons per year. The purpose of this research are: 1. Analyzing the physical properties of white glutinous rice grains consisting of geometric properties, gravimetric properties, and frictional properties, 2. Analyzing the physical properties of black glutinous rice grains consisting of geometric properties, gravimetric properties, and frictional properties 3. Comparing the physical properties between white and black glutinous rice. The method that used for research is experimental with conditioning grains moisture content with water addition to be measured its physical properties according to the specified water content variations. The result from this research are geometric properties white grains glutinous rice and black grains glutinous increase with increasing water content, mass per 1000 seeds black and white grains glutinous rice increase with increasing water content. Bulk density of white and black glutinous rice increase with increasing water content. True density fluctuates with increasing water content. The porosity of white and black glutinous rice grains decrease during the increasing water content, gravimetricix properties of white and black glutinous rice grains up and down during the increasing water content with the highest roughness level of plywood board followed by iron, glass, and stainless steel boards. Geometric properties of white glutinous rice grains are bigger than black glutinous rice grains. The gravimetric properties of white glutinous rice grains are bigger than black glutinous rice grains, but the true density is relatively the same and the porosity of black glutinous rice grains are bigger than white glutinous rice grains. While, the frictional properties of black glutinous rice grains are bigger than white glutinous rice grains
