Abstract
Tauge merupakan bahan makanan yang dihasilkan dari perkecambahan biji kekacangan seperti kacang hijau (Vigna radiata L). Proses pemisahan kulit ari tauge yaitu secara konvensional maupun dengan menggunakan alat pemisah kulit ari tauge. Alat pemisah kulit ari tauge memiliki kapasitas pemisahan 250 kg/jam dan efektivitas pengayakan sebesar 87,2 %. Penelitian ini menggunakan metode Rancangan Acak Kelompok (RAK) yang disusun secara faktorial. Perlakuan terdiri atas dua faktor, yaitu ayakan (A) dan (B) kemiringan ayakan, masing-masing faktor terdiri atas 3 variasi, yaitu Ayakan 5 mesh, 4 mesh, dan 3 mesh dengan kemiringan ayakan 60 100, dan 120. Parameter dari penelitian ini yaitu kapasitas pemisahan dan efektivitas pemisahan. Data hasil penelitian dianalisis menggunakan ANOVA dan uji (BNT) 5% dan 1%. HasiL Kombinasi perlakuan terbaik terdapat pada perlakuan ayakan 4 mesh dan kemirinan ayakan 100 dengan nilai efektivitas pemisahan 88,33 % dan kapasitas pemisahan 298,7 kg/jam
English Abstract
Bean sprouts are food ingredients that are produced from germination of bean seeds such as green beans (Vigna radiata L). There are two types of skin separation process from bean sprouts, conventional as well as by using bean sprout separator. The separator of bean sprouts has a separation capacity of 250 kg / hour and the effectiveness of separation is 87.2%. This study uses a Randomized Block Design (RBD) method which is arranged factorially. The treatment consists of two factors, namely sieve (A) and (B) sieve slope, each factor consists of 3 variations, namely sieve 5 mesh, 4 mesh, and 3 mesh with slope of sieves 60, 100, and 120. Parameters of this research is the separation capacity and the effectiveness of separation. the results of the study were analyzed using ANOVA and BNT 5% and 1%. Results The best treatment combination was in the 4 mesh sieve treatment and the sieve slope of 100 with the effectiveness of separation 88.33% and separation capacity 298.7 kg/hour
