Abstract

Urban Cafe Coworking Space merupakan salah satu UKM bisnis cafe Coworking Space yang terletak di Malang, Jawa Timur. Penelitian ini difokuskan pada kelompok jenis minuman Urban Cafe yaitu, Coffee Based, Milk Based, dan Soda Based. Pada skripsi ini pemilihan jenis minuman terfavorit menggunakan sistem keputusan, yaitu TOPSIS. Selanjutnya, dilakukan persediaan bahan baku jenis minuman terfavorit dengan Modifikasi EOQ. Ditentukan 4 kriteria yang mempengaruhi dalam pemilihan jenis minuman terfavorit. Jenis minuman terfavorit dengan menggunakan TOPSIS adalah Coffee Based di nilai sebagai alternatif terfavorit dengan nilai preferensi 0,870. Setelah didapatkan alternatif terfavorit, persediaan bahan baku dilakukan dengan mencari persediaan optimal dan rata-rata biaya minimum. Bahan baku pokok pada Coffee Based adalah Bean Robusta, Bean Arabika, Gula Aren, Susu UHT, dan SKM. Jumlah persediaan optimal dan persediaan rata-rata biaya minimum menggunakan modifikasi EOQ adalah Bean Robusta sebanyak 11,46 kg dengan biaya rata-rata minimum Rp , Bean Arabika sebanyak 12,44 kg dengan biaya rata-rata minimum Rp.1.901.908, Gula Aren sebanyak 9,4 L dengan biaya rata-rata minimum Rp.1.901.908, Susu UHT sebanyak 4,77 L dengan biaya rata-rata minimum Rp.1.901.908dan SKM sebanyak 6.06 kg dengan biaya rata-rata minimum Rp.1.901.908.

English Abstract

Urban Cafe and Coworking Space is one of the Coworking Space cafe business SMEs located in Malang, East java. This research is focused on the group of types of beverage at Urban cafe, which are Coffee-based, Milk-based, and Soda-based. In this study, the selection of the most favorite beverage uses the decision system that is TOPSIS. And then, an inventory of raw materials of the most favorite beverage types is carried out with EOQ modifications method. There are 4 criteria that affect the selection of favorite beverage types. The most favorite type of beverage using TOPSIS method is coffee based in value as a favorite alternative with a preference value of 0,870. After finding the most favorite alternative, raw material inventory is carried out by finding the optimal inventory and the minimum average. The basic ingredients in Coffee-based are Robusta bean, Arabica bean, Palm Sugar, Milk, and Sweetened Condensed Milk. The Optimal amount of inventory and the average minimum inventory cost using EOQ modification method is 11.46 kg of Robusta Bean with a minimum average cost of Rp.1.901.9081.108.168, 12.44 kg of Arabica Bean with a minimum average cost of Rp.1.901.908180.212, Palm Sugar as much as 9.4 kg with a minimum average cost of Rp.1.901.9081.113.246, UHT milk as much as 4.77 kg with a minimum average cost of Rp.1.901.9081.901.908, and Sweetened condensed milk as much as 6.60 kg with a minimum average cost of Rp.1.901.908394.128
