English Abstract

This research material was cows milk dadih which fermented in bamboo. The process making dadih by add skim milk in order to increasing total solid at cow’s milk dadih. A dadih which have been fermented, processed into ice cream. Ice cream is product make by milk with adding flavorings and served in half-frozen form. Making dadih ice cream is done with in order to increase of taste dadih. The method that used inthis research was laboratory experiment with Completely Randomized Design (CRD) with five (5) treatments and four (4) replications. The data were analyzed by analysis of variance (ANOVA), if there was a significantly different than continued by Duncan’s Multiple Range Test (DMRT). It consisted of five treatments: skim milk addition of 0%, 2,5%, 5%, 7,5% and 10%. The result showed that addition skim milk gave not significant effect (P>0,05) with an average of taste 3,50-3,88 and gave highly significant effect (P<0,01) with anv average of overrun 29,05-66,73%, sineresis 6,45-10,13% and water content 58,85-63,05%. Based on the results of the research, it can be concluded that the addition of different skim milk can increase overrun, reduce syneresis and moisture content. The best treatment for the addition of skim milk was P1 in terms of taste 3,79 ± 0,79, overrun 66,73 ± 0,73%, syneresis 9,25 ± 0,91%, water content 62,32 ± 0,71%. Based on the results of the research, we recommend that the addition of skim milk in the manufacture of cow milk dadih ice cream is at the level of 2,5% (P1), then further research is needed to test the nutrient content such as vitamins in dadih ice cream.
