Abstract
Susu sapi perah yang beredar di pasaran biasanya diberikan penambahkan bahan lain berupa air dan santan dalam jumlah yang terlalu banyak agar pedagang memiliki nilai keuntungan yang semakin besar. Hal ini menyebabkan perubahan kadar lemak dalam susu yang merupakan salah satu asupan nutrisi manusia. Penelitian ini bertujuan untuk mengidentifikasi kadar lemak dari penambahan air dan santan pada susu berdasarkan nilai impedansi susu dengan data pendukung berupa nilai kadar lemak. Penelitian ini menggunakan empat elektroda jarum yang terbuat dari emas dan satu set alat PicoScope 5244 B untuk mengetahui nilai impedansi susu sapi perah. Sedangkan untuk pengukuran kadar lemak dilakukan menggunakan metode gerber. Pengukuran impedansi dilakukan dengan menginjeksikan arus sebesar 100 μA pada rentang frekuensi 1 Hz – 1 MHz. Konsentrasi penambahan air yang digunakan adalah 0%, 25%, dan 50% dari volume susu. Sedangkan Konsentrasi penambahan santan yang digunakan adalah 0%, 10%, 20%, dan 30% dari volume susu. Hasil impedansi susu menunjukkan nilai 2309,167 Ω sampai dengan 188,417 Ω. Penambahan konsentrasi air menyebabkan kandungan asam lemak tak jenuh tinggi, kadar lemak susu menurun, dan nilai impedansi susu semakin tinggi. Penambahan konsentrasi santan mengakibatkan kandungan asam lemak jenuh tinggi, kadar lemak susu meningkat, dan nilai impedansi listrik susu semakin rendah.
English Abstract
In public market, dairy milk is usually added with water and coconut milk by seller in high amount for getting more profit. This causes change of fat content in dairy milk which is needed as nutrition for human. This study aims to identifying the fat content caused by adding of water and coconut milk based on its electrical impedance value with fat content as the supporting data. This research using four golden needle electrodes milk and a set of 5244 B PicoScope tool to finding the impedance of dairy milk. Meanwhile to fat content is measured by gerber method. Impedance is measured by injecting current of 100 μA in the range frequency 1 Hz - 1 MHz. The using of water addition’s concentration is varying of 0%, 25%, and 50% of milk volume. Meanwhile, the concentration of coconut milk addition is varying of 0%, 10%, 20%, and 30% of milk volume. The result of milk impedance shows the value 2309,167 Ω until 188,417 Ω. The addition of water concentration causes the higher amount of unsaturated fatty acid, the decreasing value of fat content, and the increasing value of milk impedance. The addition of coconut milk concentration caused the higher amount of saturated fatty acid, the increasing value of fat content, and lower milk impedance.
