Abstract
Penambahan hidrogen peroksida (H₂O₂) pada media air untuk mengawetkan ikan dapat memicu timbulnya radikal bebas serta merusak molekul dan jika dikonsumsi terus menerus maka dapat mengakibatkan kanker. Aktivitas radikal bebas serta molekul yang rusak dapat diredam dengan pemberian antioksidan. Penelitian ini bertujuan untuk menentukan jumlah radikal bebas, kandungan protein serta FFA(Free Fatty Acid) yang terdapat pada ikan nila yang terkontaminasi H₂O₂ serta menganalisa pengaruh antioksidan belimbing wuluh terhadap jumlah radikal bebas, kandungan protein serta FFA(Free Fatty Acid) pada ikan nila yang terkontaminasi H₂O₂. Metode yang digunakan dalam penelitian ini adalah pemberian tiga perlakuan berbeda pada sampel ikan nila.Perlakuan pertama ikan nila tanpa penambahan H₂O₂, perlakuan kedua ikan nila dengan penambahan H₂O₂ serta perlakuan ketiga ikan nila dengan penambahan H₂O₂ dan diberi antioksidan. Ketiga sampel tersebut kemudian diujikan kadar protein dan kadar FFA serta diamati jenis radikal bebas menggunakan Electron Spin Resonance (ESR) berdasarkan perhitungan factor lande g yang diperoleh. Berdasarkan hasil penelitiantidak ditemukan radikal bebas pada ikan nila tanpa penambahan H₂O₂. Namun, pada ikan nila yang terkontaminasi H₂O₂ ditemukan jenis radikal bebas O₂⁻ dengan nilai factor g 1,5027. Penambahan antioksidan memberikan penurunan radikal bebas dan kadar FFA serta dapat meningkatkan kadar protein.
English Abstract
The addition of hydrogen peroxide (H₂O₂) to the water medium to preserve fish can lead to free radicals and damage the molecule and if consumed continuously it can lead to cancer. Free radical activity and damaged molecules can be muffled with antioxidants. This study aims to determine the amount of free radicals, protein content and FFA (Free Fatty Acid) contained in tilapia contaminated with H₂O₂, and analyzed the antioxidant effect of star fruit to the amount of free radicals, protein content and FFA (Free Fatty Acid) in tilapia contaminated H₂O₂. The method used in this study is the provision of three different treatments on the sample of tilapia. The first treatment of tilapia without the addition of H₂O₂, the treatment of the two tilapia fish with the addition of H₂O₂ as well as the treatment of the three tilapia fish with the addition of H₂O₂ and given the antioxidant. The three samples were then tested protein content and FFA levels and observed free radical type using Electron Spin Resonance (ESR) based on calculation of lande g factor obtained. Based on the results of the researchers there were no free radicals found in tilapia without the addition of H₂O₂. However, on tilapia contaminated with H₂O₂, found free radical type O₂⁻ with g factor value 1.5027. The addition of antioxidants provides a reduction of free radicals and FFA levels and can increase protein levels.
