Abstract

Cafe merupakan salah satu bisnis kuliner yang cukup menjanjikan. Potensi bisnis cafe cukup tinggi, namun belum diimbangi kesadaran jaminan kehalalan dan keamanan produknya. Disisi lain, produk bersertifikat halal harus memenuhi standard halal dalam prosesnya. Konsep Halal Assurance System (HAS) 23102 digunakan untuk pengajuan sertifikasi halal cafe. Permasalahan pada cafe ini yaitu persiapan yang harus dilakukan untuk mendapatkan sertifikat layak hygiene serta memperkirakan biaya untuk mendapat sertifikasi halal. Penelitian menggunakan metode deskriptif kuantitatif, yaitu mencari data informasi untuk mengestimasikan biaya persyaratan (prerequisite) dan sertifikasi halal. Pengambilan data melalui wawancara, observasi, dan dokumentasi pada pihak cafe dan LPPOM MUI Jawa Timur. Wawancara dilakukan kepada auditor (pemilik cafe, supervisor, dan manajer produksi.) Halal prerequisite cost terdiri dari halal prerequisite facilities cost (bangunan, pembelian peralatan, dan sanitasi pest control) dan halal management cost (personel, SOP, audit internal, dan sertifikat layak hygiene). Halal prerequisite cost facilities didapat sebesar Rp. 17.345.000,00. Halal management cost sebesar Rp. 12.399.300,00. Besar biaya untuk mendapat sertifikat layak hygiene Rp. 29.744.300,00. Biaya sertifikasi halal terdiri dari biaya pendaftaran, biaya audit, dan biaya sidang. Biaya pendaftaran Rp. 200.000,00 ditentukan LPPOM MUI. Biaya audit (biaya konsumsi, transportasi, penginapan dan upah) Rp. 1.800.000,00. Biaya sidang terdiri dari biaya sidang auditor LPPOM MUI dan sidang komisi fatwa. Biaya sidang auditor LPPOM MUI dan komisi fatwa dilakukan bersama-sama untuk beberapa hasil audit, sehingga biaya sidang merupakan bagian dari biaya pendaftaran.

English Abstract

Cafe is one of the culinary business that is promising. The business potential of the cafe is quite high, but it has not been matched by the awareness of halal guarantee and the safety of its products. On the other hand, halal certified products must meet halal standards in the process. The concept of Halal Assurance System (HAS) 23102 is used for the filing of halal cafe certification. The problem at this cafe is the preparation that must be done to get certified hygiene and estimate the cost to get halal certification. The research used quantitative descriptive method, which is looking for information data to estimate prerequisite cost and halal certification. Data collection through interviews, observation, and documentation on the cafe and LPPOM MUI East Java. Interviews are conducted to auditors (cafe owners, supervisors, and production managers). Halal prerequisite cost consists of kosher prerequisite facilities cost (building, equipment purchase, and sanitation pest control) and halal management cost (personnel, SOP, internal audit, and hygiene worthy certificate). Halal prerequisite cost facilities is Rp. 17.345.000,00. Halal management cost of Rp. 12.399.300,00. The cost to get a certificate worth of hygiene Rp. 29.744.300,00. The cost of halal certification consists of registration fees, audit fees, and trial costs. Registration fee Rp. 200.000,00 specified LPPOM MUI. Audit fees (consumption fee, transportation, lodging and wages) Rp. 1.800.000,00. The cost of the trial consists of the cost of auditing the LPPOM MUI auditor and the fatwa commission meeting. The cost of auditing the LPPOM MUI auditor and the fatwa commission are conducted together for several audit results, so the cost of the trial is part of the registration fee.
