Abstract
Daging ayam masih menjadi pilihan utama bagi konsumen di Indonesia. Tingkat konsumsi daging ayam per kapita meningkat dari tahun ke tahun. Seiring peningkatan jumlah penduduk Indonesia yang beragama Islam maka kebutuhan pangan halal semakin meningkat. Diantara usaha penyedia daging ayam halal adalah RPA Amanah Surabaya, RPA H. Busri Surabaya dan RPA Mualim Broiler Batu. Aspek penting produksi ayam halal adalah metode penyembelihan dan alat yang digunakan, baik di skala kecil maupun sedang. Karena itu, dibutuhkan analisis pemilihan alat penyembelih sesuai kapasitas produksi pada RPA untuk menghasilkan efisiensi produksi yang tinggi bagi pelaku usaha. Penelitian ini bertujuan untuk menganalisis kelayakan pilihan investasi alat penyembelih bagi tempat pemotongan ayam skala kecil dan Rumah Potong Ayam (RPA) skala sedang untuk mendukung persyaratan sertifikasi halal. RPA skala kecil memiliki Halal Control Point (HCP) pada tahap penyembelihan dan pengumpulan pada tong. Total biaya investasi RPA skala kecil yaitu Rp 11.260.000 dan biaya kebutuhan modal kerja per tahun yakni Rp Rp 1.230.227.300. Berdasar perhitungan HPP sebesar Rp 22.782/ekor dan harga jual 1 ekor ayam yaitu Rp 29.617. Pada sisi lain, RPA skala sedang memiliki HCP pada tahap penggantungan, stunning, dan penyembelihan. Total biaya investasi yakni Rp 922.030.000 dan biaya produksi per tahun sebesar Rp 16.198.388.254. HPP RPA skala sedang sebesar Rp 22.498/ekor dan harga jualnya sebesar Rp 29.247/ekor. RPA skala sedang dapat menggunakan shackle conveyor untuk mengurangi biaya pengeluaran akibat gaji karyawan sehingga HPP sebesar Rp 22.029/ekor dan harga jualnya sebesar Rp 28.638/ekor. Pada viii RPA skala sedang telah memenuhi syarat penyembelihan halal, namun RPA skala kecil masih terdapat HCP yang rawan tidak terpenuhi yakni di tahap pengumpulan ayam pada tong. Hal ini dapat diatasi dengan alat gantungan (shackle) sederhana. Penggunaan alat ini mengakibatkan HPP RPA skala kecil menjadi Rp 22.016/ekor dan harga jualnya Rp 28.621/ekor.
English Abstract
Chicken meat is still the main choice for consumers in Indonesia. The level of consumption of chicken per capita increases from year to year. Along the increasing number of Indonesian population who are Islamic then the need for halal food is increasing. Among the halal chicken meat exertion is poultry slaughter house of Amanah Surabaya, poultry slaughter house H. Busri Surabaya and poultry slaughter house of Mualim Broiler Batu. An important aspect of halal chicken production is the method of slaughter and tools used on both small and medium scale. Therefore, an analysis of the selection of slaughtering tools according to the production capacity of slaughter house is required to produce high production efficiency for business actors. The objective of this research is to analyze the feasibility of investment choice of slaughtering tool for small and medium scale poultry slaughter house to support halal certification requirement. A small scale poultry slaughter house has a Halal Control Point (HCP) at the stage of slaughter and collection on vats. The total cost of small-scale poultry slaughter haouse investment is Rp 11,260,000 and the cost of working capital needs every year is Rp 1,230,227,300. Based on the calculation of cost of good manufactured of Rp 22,782/chicken and the selling price of 1 chicken is Rp 29.617. On the other hand, medium-sized poultry slaughter haouse has HCP at hanging, stunning, and slaughtering stages. Total investment cost is Rp 922.030.000 and production cost per year is Rp 16,198,388,254. Cost of good manufactured poultry slaughter haouse medium scale of Rp 22,498/chicken and the selling price of Rp 29,247/chicken. Poultry slaughter haouse medium scale can use shackle conveyor to reduce expenses incurred due to salary of x employees so that the Cost of good manufactured of Rp 22.029/chicken and the selling price of Rp 28.638/chicken. In a medium-scale poultry slaughter haouse that has qualified halal slaughter, but small-scale poultry slaughter haouse still has a HCP that is not prone to be met in the stage of collecting chickens in vats. This can be overcome with a simple shackle. The use of this tool resulted in a small-scale cost of good manufactured poultry slaughter haouse of Rp 22.016/chicken and the selling price of Rp 28,621/chicken.
