Abstract

Kerang salah satu hewan laut yang sering ditemukan dipasaran. Kerang memiliki nilai ekonomis yang tinggi karena kerang aktif dikonsumsi masyarakat. Kerang juga dapat diolah menjadi berbagaai macam masakan dan sering di jual di warung maupun restoran. Salah satu jenis kerang yang sering di jumpai di pasaran adalah kerang darah (Anadarah granosa). Kerangtermasukbahanmakananperikanan yang mudahterkontaminasiolehadanyabakteri. Salah satumetode yang digunakanuntukmengujikualitasmutumikrobiologiskerangdarahdapatditentukanmelaluiujiperhitunganju mlahkolonibakteriberdasarkan Total PLate Count (TPC) kolonibakteri. Metodeinimerupakanmetodepenghitunganberdasarkanjumlahkolonibakteri yang tumbuh. Satuanpenghitungan yang dipakaiadalahcfu (colony forming unit). TujuandaripenelitianiniyaituuntukmengetahuispesiesbakteridominanpadaKerangDarah di Kota Malang danmenghitungsertamenganalisisjumlahkolonibakteripadakerangdarahberdasarkanmetode Total PLate Count (TPC) kolonibakteri di Kota Malang. Berdadarkanhasilidentifikasibakteri, bakteridominan yang adapadasampelkerangdarahadalahspesiesAeromonassobria. Analisisujijumlahkolonibakteripadakerangdarahberdasarkanmetode Total PLate Count (TPC) kolonibakterimenunjukkanbahwareratanilai Total PLate Count (TPC) kolonibakteripadakerangdarahyaitu 2,62x104cfu/g. Berdasarkanketetapandari BPOM, batasmaksimalcemaranbakterikontaminanpadakerangdarahadalah 5x105cfu/gr (Depkes RI, 1995). Hal inimenunjukkanbahwakualitasmikrobiologisampelkerangdarahbaikdanlayakdikonsumsi, karenanilai TPC kolonibakteritidakmelampauibatasmaksimalcemaranbakteri yang ditetapkanoleh BPOM.

English Abstract

Shellfish one of the marine animals are often found in the market. Shellfish has a high economic value because of the active shellfish consumed by the community. Shellfish can also be processed into various kinds of cuisine and often sold in restaurant. One type of shell that is often encountered in the market is blood cockle (Anadarahgranosa). Shellfish include foodstuffs that are easily contaminated by bacteria. One method used to test the quality of microbiological quality of blood cockle be determined through the calculation of the number of bacterial colonies based on the Total PLate Count (TPC) bacterial colonies. This method is a method of calculation based on the number of bacterial colonies that grow. The count unit used is cfu (colony forming unit). The purpose of this research is to find out the dominant bacterial species in blood cockle in Malang City and to count and analyze the amount of bacterial colonies on blood cockle based on the bacteria colony Total Count (TPC) method in Malang City. Based on the results of bacterial identification, the dominant bacteria present in blood cockle samples are Aeromonassobria species. The analysis of bacterial colony count test on blood cockle based on bacterium colony Total PLate Count (TPC) method showed that the mean value of Total PLate Count (TPC) bacterial colony on blood cockle was 2,62x104 cfu. Based on the determination of BPOM, the maximum limit of contaminant on blood cockle is 5x105 cfu. This shows that the quality of microbiological samples of blood cockle both good and feasible consumed, because the value of TPC bacterial colony does not exceed the maximum limit of bacterial contamination established by BPOM.
