Abstract

Indonesia memiliki kebun kelapa terluas di dunia. Produktivitas pengelolaan kelapa masih rendah. Salah satu produk turunan dari kelapa adalah minyak kelapa murni atau dikenal dengan Virgin Coconut Oil (VCO). VCO menguntungkan bagi kesehatan karena mengandung asam laurat, sehingga diperlukan penelitian untuk meningkatkan kuantitas dan kualitas VCO. Pembuatan VCO adalah proses demulsifikasi protein, sehingga emulsi protein, air dan minyak dapat terpisah. Salah satu cara untuk memecah emulsi adalah dengan sentrifugasi. Pada penelitian ini pemecahan membran sel dibantu dengan proses pretreatment Pulsed Electric Field (PEF). Tujuan penelitian ini adalah mengetahui tegangan dan frekuensi PEF yang optimal dalam pembuatan VCO terhadap rendemen. Penelitian dilakukan menggunakan Rancangan Komposit Terpusat 2 faktor. Faktor I adalah tegangan (1,58 KV sampai 4,41 KV) dan faktor II adalah frekuensi (1,19 KHz sampai 3,31 KHz) yang diformulasikan menggunakan bantuan software Design Expert 9 Free Trial. Hasil optimal didapatkan dari perlakuan dengan tegangan 3,277 KV/cm dan frekuensi sebesar 2,560 KHz. Kondisi tersebut menghasilkan rendemen 17,57%, berat jenis 0,918%, kadar air 0,258% dan kadar asam lemak bebas sebesar 0,357%. Simpangan model untuk rendemen 0,706%, berat jenis 0,325%, kadar air 4,032%, dan asam lemak bebas 5,834% terhadap hasil verifikasi. Hasil prediksi sangat bagus karena simpangan kurang dari 5%, kecuali untuk kadar asam lemak bebas.

English Abstract

Having the largest coconut plantation in the world, the productivity of coconut production is still low in indonesia. One of the products deriving from it is pure coconut oil or commonly known as virgin coconut oil (VCO). VCO, moreover, is beneficial towards health for containing lauric acid, so that it requires studies related to the topic of how to increase both the aspect of quantity and quality of the VCO itself. The production of VCO is the process of demulsification within protein in which the protein emulsion, water, and oil can be separated. One of the ways to break the emulsion is by using centrifugation. In this particular study, the separation of the cell membrane is helped through the process of pretreatment pulsed electric field (PEF). The objective of this study is to determine the frequency as well as the voltage within an optimal PEF in the production of VCO towards produced sample. The study was conducted by using composite design focussing on two factors. The first factor is voltage (1.58 KV until 4.41 KV) and the second one is frequency (1.19 Khz until 3.31 Khz) in which they were formulated by using software design expert 9 free trial. The optimal result was obtained from the treatment within the voltage of 3.277 KV/cm and the frequency of 2.560 Khz. This particular condition yielded of rendement of 17.57%, a density of 0.918%, a water content of 0.258%, and free fatty acid content of 0.357%. Deviation model respectively yielded of rendement 0.325%, a density of 0.325%, a water content of 4,032%, and free fatty acid content of 5.834% to verification results. The prediction results are very good because deviation is less than 5%, except for free fatty acid levels.
