Abstract

Etanol dapat diperoleh melalui proses fermentasi glukosa menggunakan Saccharomyces cerevisiae. Sumber potensial glukosa adalah pati dari biji durian. Tujuan penelitian ini adalah untuk menentukan model kinetika fermentasi etanol dari glukosa serta mengetahui sifat fisik etanol yang dihasilkan. Fermentasi glukosa dilakukan dengan menggunakan Saccharomyces cerevisiae pada variasi konsentrasi awal glukosa 20, 40, 60 dan 80 ppm selama 72 jam. Etanol yang terbentuk dianalisis secara spektrofotometri UV- Vis pada panjang gelombang 605nm setelah direaksikan dengan kalium dikromat dalam cawan Conway. Penentuan sifat fisik etanol bias. entasi etanol mengikuti persamaan , [ ] , konstanta Michaelis-Menten (Km) 5,5 dan n maksimum (Vmaks) 5000 ppm jam-1. Adapun sifat fisik yaitu massa jenis dan indeks bias berturut-turut mempunyai kisaran nilai 0,9767-0,9809 g/mL dan 1,3347-1,3365.

English Abstract

Ethanol can be produced by glucose fermentation process using Saccharomyces cerevisiae. The potential source of glucose is starch of durian seed. The aims of this research were to determine the kinetics model of ethanol fermentation from glucose and to identify the physical properties of ethanol produced. Glucose fermentation using Saccharomyces cerevisiae for 72 hours at various initial concentrations of 20, 40, 60 dan 80 ppm has been conducted. After ethanol produced, was reacted with potassium dichromate using Conway crucible, it was then analyzed by UV-Vis spectrophotometer at 605nm. The physical properties of ethanol determined were density and refrac The kin ation obtained was accordance with . [ ] . . As for Michaelis- Menten (Km) co was 5 and maximum velocity was (Vmax) 5000 ppm.hour-1. In addition, its physical properties i.e. density and refractive index were in the range of 0.9767-0.9809 g/mL and 1.3347-1.3365, respectively
